These zucchini Fritters are a great veggie to add to the dinner table. They are fried in coconut oil instead of vegetable oil. This not only gives them a much better flavor but makes them much better for you even though they are fried. They are so easy to make that you can not really mess them up, which is my favorite type of recipe.
All you have to do is shred the zucchini, mix it with the other ingredients and then cook them in a pan. Super simple and a recipe I make often during the summer when we end up with an over load of zucchini.
Tips for Making this Recipe
Make them gluten free. You can make them gluten free too which is what the recipe includes, but if you do not need them gluten free then just use regular flour.
Be sure to get the water out of the Zucchini. It is important that you squeeze the water out of the shredded zucchini. I use a cheesecloth to do it because I find that the easiest way but you can also use paper towels or a dish towel.
What is the best oil to use when Frying Fritters?
You can use any oil that you want to to fry them, but I like to use coconut oil because it is a healthier oil. It is important that any oil you use is hot enough to cook them, if the fritter does not sizzle when placed in the pan with oil it is not hot enough.
Why are my zucchini Fritter soggy?
If you do not squeeze out enough of the water with the cheese cloth it will add more liquid to the batter that can make them soggy when you add them to the oil to fry them. If the batter is too thick add some more water. If the batter is runny add a little bit more flour.

How to Store Zucchini Fritters
These are best served right away or frozen, but if you have any leftovers store them in the fridge in an air tight container. Reheat them in a pan on the stove so they have the crispiness when reheated.
Can I freeze Zucchini Fritters?
If you want to make fritters with zucchini to have in the freezer you can. Make tthe fritter batter, cook them in the pan and then place them in a single row on a baking sheet. Place the baking sheet in the freezer for 1-2 hours. Once the zucchini fritters are frozen solid, remove them from the baking sheet and place in an air tight continer or a zip close bag and store in the freezer.
To enjoy frozen zucchini fritters let them thaw in the fridge overnight and then reheat in a pan or in the oven for 8 minutes at 400°F.
Zucchini Fritters Ingredients
- 2 zucchini
- 1 cup gluten-free flour, all-purpose flour or 1 cup almond flour
- 1/4 onion
- 2 large eggs
- 1 tablespoon chopped garlic
- 1/4 cup coconut oil
- 2 tablespoons chopped parsley
How to Make Zucchini Fritters
Grate 2 zucchini, then squeeze water out with cheesecloth. Discard the water.
In a large bowl combine zucchini, onion, flour, eggs, parsley, and garlic and mix thoroughly.
Heat coconut oil in skillet on medium high.
Using a 1/4 cup scoop and drop about 8 portions of mixture into skillet.
Cook until golden brown on both sides, approximately 3 minutes per side.
Drain onto paper towels.

I made these for dinner. The only thing I added was 1-1/2 teaspoons of Italian seasoning, Tony’s seasoning, garlic powder and onion powder. They turned out really great. My husband absolutely loved them.
