  • In a large bowl, put the flour, baking powder, salt, and sugar. Mix them well with a whisk.
  • In a medium bowl, put the milk and egg. Whisk them together.
  • Pour the milk mixture into the big bowl with the dry stuff. Mix gently. It will still be a bit lumpy, but that is okay.
  • Put the butter in a small bowl and microwave it until it melts.
  • Add the vanilla extract to the melted butter and mix well.
  • Pour the butter and vanilla mixture into the flour and milk mixture. Mix gently. DO NOT OVER MIX.
  • Add the chocolate chips and fold them in gently.
  • Heat a medium-sized nonstick skillet over medium heat, or if you are using a griddle, heat it to medium. Add a little butter or spray the pan with nonstick cooking spray.
  • Turn the pan down to medium-low heat and pour the pancake batter into the pan. You can make big pancakes or small pancakes.
  • When bubbles form around the edges of the pancake, gently flip it over to finish cooking.
