  • Mix dry ingredients. In a large bowl, add the flour, baking powder, salt, and sugar. Mix well with a whisk.
  • Mix wet ingredients. In a medium bowl, add the milk and egg. Whisk together.
  • Combine wet and dry ingredients. Pour the milk mixture into the bowl with the dry ingredients. Gently mix until just combined. It will still be a bit lumpy.
  • Melt butter. Microwave the butter in a small bowl until melted. Add the vanilla extract to the melted butter and mix well.
  • Add butter mixture. Pour the butter and vanilla extract mixture into the flour and milk mixture. Gently mix. DO NOT OVERMIX.
  • Add chocolate chips. Gently fold the chocolate chips into the batter.
  • Heat the pan. Heat a medium-sized skillet or non-stick frying pan over low heat. If using a griddle, heat to low heat.
  • Cook the pancakes. Turn the pan to medium-low heat. Pour the pancake batter into the pan. You can make full-sized pancakes or silver dollar pancakes. When bubbles form around the edges, gently flip the pancake to finish cooking.
