Ingredients

  • 8 ounces uncooked penne pasta
  • 4 ounces cream cheese at room temperature
  • ¾ cup low sodium chicken broth
  • 1 teaspoon minced garlic
  • cup + 1 tablespoons Buffalo sauce divided
  • ½ cup mozzarella cheese shredded
  • ½ cup mild cheddar cheese shredded
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 cups rotisserie chicken shredded
  • 2 tablespoons green onions chopped

Instructions

  • Bring a large pot of water to a rolling boil. Add about a tablespoon of oil and 1/2 teaspoon of salt to the boiling water.
  • Carefully add the pasta to the boiling water, stirring gently to prevent sticking. Follow the cooking time on the package directions.
  • Once the pasta is cooked, use a colander or strainer and drain the pasta to remove all the water. Set the drained pasta aside.
  • Heat a large skillet over low heat and combine the cream cheese and chicken broth.
  • Allow the cream cheese to melt in the heat and whisk until everything comes together, about 3-5 minutes.
  • Stir in the garlic and ⅓ cup of Buffalo sauce, and let the sauce simmer for 2 minutes.
  • Gradually add the mozzarella and cheddar cheese, along with salt and pepper, and mix until the cheese is melted, and the sauce is creamy.
  • Add the cooked pasta and shredded chicken to the skillet, tossing them with the creamy sauce until everything is well coated.
  • Garnish with chopped green onions for added freshness and drizzle the remaining tablespoon of Buffalo sauce over the pasta and serve.
