Is it hard to blanch the almonds?
No it is not hard to blanch almonds.
How to Blanch Almonds
Simply boil water and add the almonds once boiling. Let them sit in the boiling water for a minute or two. When the skin is wrinkly, you can remove the almonds and rinse with cold water. When cool enough to handle, pinch the almonds between two fingers and the almond will slip out. Careful though as pinching too hard may have the almond shooting across the room.
Can I use store bought sugar cookie dough to make Halloween Sugar Cookies?
Yes, you can use store bought sugar cookie dough to make this recipe. You will need the food coloring, almonds and icing ingredients in addition to the store bought sugar cookie dough to complete the recipe.
How much sugar cookie dough should I use per witch finger?
For this recipe, I used a 1 1/2 inch ball of dough. You can adjust the size of your cookie to your desired size. You may need to adjust cooking time accordingly. The cookie will expand when baked, so take that into account.
How long will the icing stay liquid?
The icing will dry the longer it stands. It is best to use it as soon as possible. If a skin forms, you can mix the icing to smooth it out again.
Do I need to use food coloring and make the cookies green?
If you do not like using food coloring you can skip adding it to the sugar cookie dough, they will still look like witch fingers, however I like to make things as fun and themed as possible so I like them best when they are colored green.
Can I make Sugar Cookie dough ahead of time?
You can make sugar cookie dough ahead of time and store it in an air tight container for 3-5 days in the fridge. When you want to make the cookies, remove the dough from the fridge and roll out and shape as desired, and then bake according to the recipe directions below.
How long in advance can you make Halloween sugar cookies with icing on them?
Once the cookies are decorated they will keep for up to 2 weeks as long as they are store properly in an airtight container.

In a medium-sized bowl, mix the flour, baking powder, and salt. Use a whisk to mix everything together well.
Slowly add the flour mixture to the sugar, butter, egg, and vanilla extract mixture. Mix everything until well incorporated.
Add the green food coloring and mix well.
Chill your dough for 10 minutes.
In the meantime, blanch the almonds. Bring 2 cups of water to boil and add the almonds. Let boil for a few minutes. When you can take an almond, squeeze it and have the almond pop out of the skin, they are ready. You can rinse with cold water to cool enough to be able to handle. Set aside to cool and dry.
Take a 1 1/2 inch scoop of dough and roll into a thin sausage shape.
Pinch the dough close to the top of one side and about an inch and 1/2 below that to create the knuckles.
Using a toothpick or a knife, create lines on your knuckle.
Take an almond and push the rounded end of the almond (about 2/3 of the almond) onto the top of the dough to create your nail bed.
Place the fingers onto a sheet pan lined with parchment paper or a silicone mat, bake at 350 for 18-20 minutes or until the cookies have browned on the edges.
Move the cookies to a cooling rack and allow them to cool completely.
While the cookies are cooling prepare the sugar icing.
Remove the almonds from the cookies and place next to the cookie they came from, add a small amount of icing to nail bed or dip bottom 2/3 of nail into icing and press back onto the cookie, allowing some of the icing to squeeze out.
Set aside to dry, about 5 minutes.
