Thin Mint Cookie Pops
If you are like me and find 2 random boxes of thin mint cookies in the freezer that you were saving from Girl Scout Cookie season then these Thin Mint Cookie Pops are perfect for you! I love making cake pops, but when I found some random boxes of Girl Scout thin mint cookies in the freezer I had the brilliant Idea to turn them in to cookie cake pops! I am so glad that I did because they were amazing!
I made these cookie pops and shared them with all of my other Girl Scout Mom friends and they loved them! We will be for sure stocking up even more come cookie season so we can make more of these all year long.

Tips for Making this Recipe
Use a double boiler to melt the chocolate. If you have never used a double boiler to melt chocolate it is super easy to do, just check out how to melt chocolate using a double boiler.
Don’t skimp on freezer time. It is important to put the cookie pops in the freezer long enough to solidify the cookie cake pop mix and the chocolate on the popsicle sticks.
Use a piece of styrofoam to hold the cake pops. I get my styrofoam pieces at the craft store but you can also grab them on Amazon.
Mint Chocolate Cookies. When it is Girl Scout cookie season I use Thin mint cookies, and then we call this a Thin Mint Chocolate Cake. However it is not always cookie season so I have found solutions to make this amazing mint chocolate cookie cake any time of the year. If you have an Aldi near you, head on over and grab their copy cat thin mint cookies, they are in a green package and called Fudge Mint Cookies. If you do not have an Aldi you can use the Keebler Grasshopper cookies to make this recipe.
Thin Mint Cookie Pops Ingredients
- 36 thin mint cookies
- 4 ounces cream cheese, softened
- 12 ounces chocolate candy melts
- 2 tablespoons candy melting aid
- 2 ounces green candy melts
- 15 cake pop sticks
How to Make Thin Mint Cookie Pops
Place the thin mints into a food processor and pulse them on high until they are very fine crumbs.
Add the cream cheese into the food processor and pulse until just combined.
Line a sheet pan with parchment paper.
Scoop about a tablespoon worth of this dough and roll them into a ball and place balls on parchment paper.
Once you have made all 15 cookie pop balls, place the sheet pan in the freezer for 15 minutes.
While your balls are in the freezer melt your chocolate and candy melting aid in a double boiler.
Dip the end of the cake pop stick into the chocolate and stick it into the cookie ball. Place the cake pops back into the freezer for 5 minutes.
Place the chocolate into the microwave for about 20 seconds to reheat the chocolate. Pour the chocolate into a cup to make dipping easier.
Dip the cookie pop into the chocolate making sure you go straight down until the whole cake pop is covered and then tap the stick on the side of the glass to help remover and extra chocolate.
Place the sticks into a piece of styrofoam.
While they dry melt the green chocolate and place it into a piping bag, cut a small tip off the bottom.
Drizzle the chocolate over the top of each cookie pop.

Ingredients
