My kids love it when I make Grinch cookies. These easy to make sugar cookies use a box of cake mix as the base, and are then rolled in a powdered sugar mixture for a soft and chewy sugar cookie that everyone always loves.

Tips for Making Cake Mix Cookies
Don’t press the dough balls down. When you bake this Grinch crackle cookies recipe the cookies will flatten while they bake.
Don’t over bake. Cookies will be soft when you remove them from the oven. If you bake them too long you will lose the soft and fudgy center, but as they cool the edges will harden up.
Make bigger cookies. If you want to make larger cookies you can just bake them for an additional 2 minutes. Making them bigger is great for making cookie ice cream sandwiches.
Use gel food coloring. You can use liquid food coloring, but i find that green gel food coloring gets a better color then using liquid green food coloring.
Line your baking sheets. Cake mix cookies can stick to the pan, so I always recommend using parchment paper. You can also use wax paper or a silicone baking mat.
Use a hand mixer. You don’t need to use a hand mixer or a stand mixer for this recipe but it will make mixing the cookie dough easier.
Use a cookie scoop. I use a small cookie scoop to scoop the dough and make the cookie dough balls because it makes life easier.
Variations of this recipe
Add chocolate chips. White chocolate chips, milk chocolate chips, and semi-sweet chocolate chips. You can use mini chocolate chips or normal sized chocolate chips.
Add nuts. Walnuts and pecans are great additions to these grinch cookies.
Change up the cake mix. You can use white cake mix, Vanilla cake mix or yellow cake mix. If you are using yellow cake mix you will need to use more green food coloring to get the bright green color.
Place the heart sprinkle on before baking. l prefer to put the heart sprinkles on after they are done baking, but you can put them on the cookie without using the frosting cookie glue if you prefer before baking the cookies.

If stored in an airtight container or a zip close bag these cookies will keep fresh for about a week.
How to freeze Cake Mix Cookies
You can freeze Grinch cake mix cookies before or after baking. It is easy to do either way you want to, so freeze these cookies however you prefer.
How to freeze baked cookies. You can freeze cake mix cookies after they are baked, just allow them to cool completely on a baking rack and then place the cookies on a baking sheet and place in the freezer. Once the cookies are frozen store them in the freezer in an air-tight container or a zip-close bag.
How to freeze cookie dough. If you want to freeze the cookie dough follow all of the steps until rolling them in powdered sugar. Roll the cookie dough into balls and place the cookies on a baking sheet and place in the freezer. Once the cookies are frozen store in the freezer in an air-tight container or a zip-close bag. When you are ready to bake the cookies remove them from the fridge and allow them to thaw for 30 minutes. Then roll in the confectioners’ sugar and bake according to the recipe.
Grinch Cake Mix Cookies Ingredients
- Boxed Vanilla cake mix. You can use any brand of cake mix that you want.
- Eggs
- Vegetable oil. You can also use canola oil or olive oil.
- Powdered sugar
- Red Heart Sprinkles or small red heart candies.
- Green Food Coloring. Use gel coloring for better green coloring in the cookies.
How to Make The Grinch Cake Mix Cookies
Line the baking sheets with parchment paper and set aside.
Preheat the oven to 375 degrees.
In a large mixing bowl combine the cake mix, eggs, and oil. Stir until well combined. Add drops of green food gel coloring until you get the perfect shade of Grinch-green color you want.
Pour the powdered sugar into a bowl.
Scoop the cookie dough with a 1 tablespoon size scoop. Roll the cookie dough into a ball and roll the cookie dough balls in the powdered sugar.
Place the cookies on a sheet pan leaving two inches in between each cookie.
Bake for 8-10 minutes until the edges are slightly brown on the edges.
While cookies are cooling mix 1 tablespoon powdered sugar and 1 teaspoon of water to make a “cookie glue”.
When the cookies are done baking, remove them from the oven. Let sit on the baking sheet for 5 minutes and then remove and place on a wire rack to finish cooling.
Once the cookies are cooled, put a dot of cookie glue on the back of each red heart sprinkle and place a red heart sprinkle on the right side top of the cookie.
