I love holiday meals. I love the family time and talking and I love the amazing food that we all get to enjoy. For many years we made sweet potatoes from a can and then poured some marshmallows on top and then baked them in the oven. I was not a fan but I knew no other way until a friend of mine told me about how she made sweet potatoes for holiday dinners. I made them her way and loved it, so did everyone in my family.
However I really missed the marshmallows on top. I wanted the next time I made it to be a combination of the two because I just knew it would be amazing. And it was. There was nothing left in the casserole dish after the first holiday dinner I made this for. I have kinda slacked on getting it shared with all of you, however with this year’s Thanksgiving only a few weeks away I figured now was the perfect time to share it.
I combined my love for melted marshmallows with sweet potatoes and that easy sweet potato casserole recipe and came up with the most amazing sweet potato casserole with marshmallows. It was a huge hit with everyone in my house and they have all been asking me when I am going to make it again.
The great thing about this classic holiday casserole is that it is easy to make. You can make it in advance if you want to and store it in the fridge or freezer to serve when you want to.

How to Make Marshmallow Sweet Potato Casserole
Cook and mash the sweet potatoes.
Then heat the oven to 350 once the sweet potatoes are done cooking.
In a large bowl mix the sweet potatoes, sugar, margarine, eggs, and vanilla until well combined.
Transfer the mixture into a 2 1/2 quart baking dish.
Pour the mini marshmallows on top.
Bake for 20 minutes at 350. If you want the marshmallows to be a bit crispier you can leave the casserole in the oven for an additional 5-10 minutes to brown the marshmallows more.
