I am always trying to come up with meals that are full of flavor, easy to make and remind me of something that I would get if I were going out to eat. I find that making restaurant quality meals at home drastically reduces the amount of eating out that we do and I am always wanting to cut back on our spending when I can.
The one reason that chicken is my go to meat is that there are so many baked chicken dinner recipes that you can make and none of them taste even remotely the same. Adding different spices, and ingredients makes it so easy to give chicken breast a different flavor every time you make it.
Since we are always so busy I have been having my oldest daughter help me cook dinner at times to. She is 14 years old and she was able to cook this Sun Dried Tomato Tuscan chicken recipe with ease when I had her make it for dinner one night after we came up with the recipe.

What goes good with Tuscan Chicken?
There are a lot of easy side dishes that you can make that go well with tuscan chicken. If you are not eating low carb or keto then you can make a side of pasta and serve the Tuscan chicken on top of pasta.
I am personally low carb, however my family is not. If you are looking for a chicken dinner recipe that is perfect for people in the house eating different diets this one is great.
We normally serve this easy tuscan chicken with a salad chuck full of veggies and one of our favorite salad dressings.
Since tuscan chicken is naturally low carb, if I am not serving this tuscan chicken recipe over pasta or zoodles then I make some steamed or roasted veggies and call it a day.
Sometimes we make this easy Tuscan chicken recipe and serve it over pasta making it a tuscan chicken pasta recipe. When we do that, I make zucchini noodles for myself and serve it over my zoodles. Sun dried Tuscan chicken Ingredients
- 1 tablespoon olive oil
- 3 chicken breast
- Salt, to taste
- pepper, to taste
- 3 cloves of garlic, fresh and minced
- 4 sprigs of thyme
- 3 ounces Sundried tomatoes, julienned
- 1/2 cup heavy cream
- 3/4 cup chicken broth
- 1/2 cup Parmesan cheese
- 6 basil leaves, julienned
How to Make Sun-dried Tomato Tuscan chicken
Preheat oven to 350°F.
Add the oil in a oven safe pan like a cast iron skillet and heat the oil over medium high heat.
Season both sides of the chicken breast with the salt and pepper and place them in the skillet and cook until the chicken is golden brown on both sides.
Add the garlic, thyme and sun-dried tomatoes to the pan sauté them until the garlic has turn light brown.
Pour in the heavy cream and chicken stock to the pan. Place the pan into the oven until the chicken reaches an internal temperature of 160°F.
Remove the chicken from the oven and stir the Parmesan cheese into the sun-dried tomato mixture. Top this with the basil and enjoy.

- Salt to taste

- 1/2 cup heavy cream
- 3/4 cup chicken stock
- 1/2 cup Parmesan cheese

Instructions
