Being able to eat cake for breakfast was one of those things as I kid I always said I was going to do. You know when your parents are pushing to make sure you are eating a healthy breakfast and you are wanting to have something desserty. You tell yourself that you are going to eat cake (and sometimes Ice cream) for breakfast. Well that worked well for me until I had kids. Then I understood why my parents always said no cake for breakfast. That made me want to come up with a breakfast cake recipe that I could tell my kids they could have cake for breakfast.
This strawberry skillet cake is the perfect cake for breakfast recipe. It is loaded with strawberries and sweet enough to be a dessert but not to sweet that you can’t call it a breakfast or brunch cake also.
Whenever I have leftover strawberries, this strawberry skillet bread is my go-to recipe to use them up! This easy cast Iron Skillet bread recipe can also be adjusted to be baked in a baking dish if you don’t have a cast iron Skillet.
Strawberry cake made in a skillet is my go-to recipe when I see a container of strawberries getting to the point where they are not bad, but they are not perfect anymore to eat by themselves. This happens with a bunch of kids in the house, they go in the fridge push back a container and then I find them right at the point where I need them for this easy strawberry bread recipe. I love when that happens if I am being completely honest.
This strawberry cake gives me the perfect excuse to make this easy strawberry skillet cake. While this is called a cake it also can be considered a strawberry bread that is perfect for serving as a brunch recipe.
There is an argument in my house on whether we should call this strawberry skillet bread, strawberry skillet cake or strawberry muffin bread because the kids tell me it tastes just like a muffin. I will leave what you call it up to you, however, I am sure it will be a recipe that is loved by all in your house.

Can I Use Frozen Strawberries?
I prefer to use fresh strawberries but you can use frozen strawberries if you thaw the berries and then drain the juice from them.
Can I just dump everything together and mix it when making this recipe?
No, you need to alternate adding the dry ingredients with the milk to give it the right texture for your finished product.
Skillet Cake Variations
The great thing about this strawberry skillet bread is that you can change out the strawberries using the same amount with different berries and it will work perfectly. You can change it out to be Blackberry Skillet bread, Blueberry skillet bread, or raspberry skillet bread with no changes other then the type of berry you are using.
What if I don’t have an Iron Skillet?
If you do not have an iron skillet then you can make this recipe in a baking dish or any 12-inch skillet. However, you need to make sure that it is a 9 inch round baking dish and at least 2 inches deep. If you are not using an iron skillet then you will not have to preheat the skillet in the oven.
How to Serve Strawberry Skillet Cake
If I am serving for breakfast, brunch or snack then I serve as is. If I am serving this easy skillet cake for dessert then I will either top with a little bit of whipped cream and some more strawberries, a sprinkle of granulated or powdered sugar.
Tips for Making this recipe
Oven temperature. Depending on your oven this can vary. For me it takes 50 minutes for it to be baking, but a friend of mine who tested this recipe also hers was done in 40 minutes. I suggest checking at the 40 minute mark and then checking every 5 minutes or so until it is done.
Dry the strawberries. It is important that your strawberries are dry completely when you put them into the batter.
Grease your pan. It is important that you grease your pan enough so the cake doesn’t stick to it. You can also use parchment paper instead of non stick cooking spray.

- Granulated white sugar
- Eggs
- Vanilla Extract
- All-purpose Flour
- Salted Butter
- Baking Powder
- Milk
- Sliced Strawberries
Strawberry Skillet Cake Directions
Place the skillet into the oven and preheat the oven to 350 degrees.
Wash and slice the strawberries and set them aside.
In the bowl of a stand mixer or a mixing bowl with a hand mixer, cream together the butter and sugar until light and fluffy.
Add in the egg, vanilla, and butter and beat on medium speed until well combined.
In a small bowl combine the flour and baking powder using a whisk.
Add the flour mixture a little at a time to the butter mixture, alternating with the milk. Mix well as you add each one in, but don’t over mix.
Fold in the strawberries berries.
Remove the skillet from the oven and spray with a nonstick spray.
Pour the batter into the hot skillet.
Bake for 50 – 55 minutes or until a toothpick comes out clean when inserted into the middle.

Do you think any shallow ovenproof dish would work for this? I don’t have a metal skillet, but do have pyrex!

Yes it would work in a pyrex, you will not need to preheat the pan.
