This cheesy spaghetti squash recipe is one that I make often. Sometimes we make it as a spaghetti squash side recipe, other times it is the main course and I serve it with a salad.

Everyone asks is spaghetti squash low carb? And YES! This amazing dish is low carb, but it soo doesn’t taste it! One ounce of Spaghetti Squash has just 1.5 carbs which is a whole lot less then potatoes! 🙂
Tips for Cooking Spaghetti Squash
If you have never cooked spaghetti squash before you might be a bit nervous, but don’t be! Cooking spaghetti Squash is so easy! When you are cutting veggies, especially cutting spaghetti squash you want to make sure that you are using quality knives. It will make the cutting of the squash sooo much easier. I have the KitchenAid Knife set and have had it for over 7 years now.
With this spaghetti squash recipe you will have to chop onions, eek! Anyone else hate having to chop onions because it burns your eyes? I use this food chopper, and it gets them the perfect size and I don’t have to touch the onion and deal with watery, burning eyes! It also takes a lot quicker to chop the onions up with it then using a knife 🙂 Save your eyes, get a chopper it will be like the best thing you ever did for when you need to cut onions! I promise!
These are my favorite baking sheets – they are on the cheaper side which I like because once a pan gets gross looking even though it is clean it bugs me so I have to buy new ones 🙂 But they are nonstick and last quite a while before looking gross.

How to Make this as a Side Dish
As much as I love this recipe as a main dish it also makes an AMAZING side dish. When I am making it as a side dish for a holiday meal I skip the chicken however you can keep it in it.
If you want to make this ahead of time, do all of the prep and cooking except the last baking portion.
Then pour all of the mixture into a baking dish and then top it with cheese and store it in the fridge until you are going to enjoy it. Then bake at 350 for 15 minutes or so to reheat it and melt the cheese before serving.
Spaghetti Squash Au Gratin Ingredients
- Whole fresh spaghetti squash
- boneless skinless chicken breast
- onion
- butter
- garlic
- greek yogurt or sour cream
- cheddar cheese
- salt
- black pepper
How to Make Spaghetti Squash Au Gratin
Preheat oven to 375 degrees.
Cut squash in half and scoop out the seeds with a spoon. Season the spaghetti squash with a little bit of olive oil, salt and pepper.
Lay skin side down on a rimmed sheet pan that is lined with aluminum foil.
Cut your chicken breast so you have four pieces of chicken. Place the chicken on the sheet pan, season with salt and pepper.
Bake for 45 mins or until cooked to a touch with a fork. When the squash is cooked Scrape the flesh with a fork to create noodles and dice your chicken in to small pieces.
While the chicken and squash are cooking place the onions with the butter in a pan on the stove over medium low heat until very soft.
Once everything is cooked combine the spaghetti squash noodles, chicken, onion, yogurt, 1 cup of the cheese, salt and pepper in a large bowl.
Place the mixture back into the empty shells and top with the cheeses and place under the broiler until golden brown.

wonderful recipe! i have never cooked spaghetti squash. Trying to watch my carbs. Very easy & delicious. I even used chicken breast i had cooked night before;just added to onions last 5 minutes to reheat (after i had cut into cubes).

great recipe….this is the first time Ive tried spaghetti squash…loved it….what i did different was that for the chicken, I used tenders and coated them in olive oil and then in a coconut flour with spices coating and baked them ….then I cut them up and added it to the rest of the mixture…I totally forgot to add in the garlic but it was really good even without it…thanks for this

My daughter makes this without chicken as she wanted her chicken on the grill. She just puts it in a casserole dish to bake. It is soooo delicious! Even better the next day. The yogurt in this recipe is essential, in my opinion, as it gives it a distinctive taste….I think.

I made this (with sour cream) and the flavor was really good, but I’m not sure if I cooked the squash right. The texture was lightly crunchy, like very thinly sliced water chestnut, maybe? Nothing like yellow squash or zucchini. We unfortunately found it off-putting. Is that the correct texture, or should I try again? Thanks!

This was a hit with my family and I’m the only one that really likes vegetables. I used sour cream and substituted kielbasa for the chicken so it’s not quite as healthy, but it was quite delicious. We also grilled shrimp and put a few on top of each serving on the plate. Yum!

I would like to try this recipe and am following a Keto diet. I am not a fan of sour cream. When it is mixed with the cheese and squash, does it still have that sour cream taste or does it blend in?
