Slow Cooker Mexican Chicken and Rice
Okay, first things first – this is not your traditional stir fry. My kids call it Mexican stir fry any time I make it, so that is what we call it in our house even though it is a slow cooker recipe. There is no stirring or frying involved, everything is done in the slow cooker except for the rice! However, I call this Mexican chicken a stir fry because even though it’s cooked in a slow cooker, I serve it over rice – just like I would a stir fry so that is what my kids call it.
This crockpot Mexican chicken is perfect for busy weeknights, just throw all of the simple ingredients into the slow cooker in the morning and let it cook. It takes just a few minutes of prep time and then the slow cooker does the rest of the work for this easy dinner. It is perfect for picky eaters and those who love Mexican food. If you have any leftovers the Mexican chicken makes awesome left overs the next day too!
This slow cooker Mexican chicken has all the flavors you would expect from a Tex-Mex meal, not too spicy but definitely not lacking in flavor either, all together in one easy slow cooker chicken recipe. How to Serve with Slow Cooker Mexican Chicken and Rice
As I mentioned, I usually serve this Tex-Mex chicken over a bed of rice, just as I would a stir fry. Since the corn and beans are cooked with the chicken, it makes a complete meal as-is over the rice. I like to add a squeeze of lime over the top for added flavor!
For a low carb option, you could serve this Mexican chicken over quinoa or cauliflower rice as well. This would be great burrito filling too!
Feel free to get creative and add more toppings in as you wish, like salsa, shredded cheese, avocado or sour cream. Maybe some fresh cilantro too!
Dinner prep tip! If you choose to serve it over rice, that does need to be cooked separately but one of my tricks for quick and easy weeknight dinners is to make a big batch of rice at the beginning of the week and just reheat leftovers in the microwave for nights like this!

There are lots of things that you can serve with this slow cooker chicken recipe. When I make it I like to stick with the tex-mex theme and have our side dishes be some of our Mexican favorites.

Variations of this recipe
Add more spice. If you want it to have more of a kick you can add green chilies or chili powder.
Make it a burrito bowl. You can easily use this slow cooker chicken to make a burrito bowl. Add rice in a bowl, then the chicken mixture, and then top it with slices of avocado, green onions, sour cream, or homemade guacamole and shredded cheddar cheese.
Add more veggies. If you are wanting to add more veggies you can also add pinto beans, diced tomatoes, red pepper, or green bell peppers for added veggies.
Use chicken thighs. If you do not have chicken breasts on hand you can use boneless skinless chicken thighs.
Change up the rice. You can use white rice, brown rice, or even minute rice. Whichever you prefer.
Can I make Mexican Chicken ahead of time?
Yes! You can make the Mexican chicken ahead of time and the rice and store it in the fridge. You can also store it in the freezer.
How to Store Leftover Slow Cooker Mexican Chicken and Rice
This Tex-Mex chicken over rice makes great leftovers too! It’s great for meal prep because everything can be reheated in one dish in the microwave!
Store in the fridge for up to 4 days, in an airtight container, and just be sure to reheat thoroughly before eating!
Can I freeze this after it is cooked?
Yes! You can make this Mexican chicken and then freeze it for a quick reheat meal later. Allow it to cool completely and then store the Chicken mixture in one zip close freezer and the rice in another. Keep in the freezer for up to 6 months. To heat defrost in the fridge or heat in the microwave or in a pot on the stove.
Can I make this a freezer meal?
Yes! If you want to make this a freezer meal pour all of the ingredients except the rice into a zip close freezer bag. You can then dump all of the ingredients into the slow cooker to cook the morning you want to make it.

Slow Cooker Mexican Chicken and Rice Ingredients
- 1 pound Boneless skinless chicken breasts, cubed
- 1 14.5 ounce Can black beans, rinsed & drained
- 1 12 oounce Bag frozen corn
- 1 Onion, chopped
- 2 Cloves garlic, minced
- 1 teaspoon ground Cumin
- Salt to taste
- pepper to taste
- 2 Limes, juiced
- 2 cups white rice
How to Make Slow Cooker Mexican Chicken and Rice
Get your slow cooker ready, spray it with nonstick cooking spray.
Then combine your chicken, corn, black beans, cumin, garlic, lime juice, and onion to your crockpot.
Give everything a store to mix well.
Cook on low for 8 hours or high for 4 hours.
During the last 30 minutes of cook time cook 2 cups of rice according to cooking direction on rice package. You can also make baked rice if you want to.
Put rice on to your plate, then top with the slow cooker Mexican stir fry, and squeeze a little bit of lime juice on top if you want to add more to your meal.
