My husband is in love with the store bass pro shop. We stopped there on out way home for our last vacation and spend three hours there! To make it up to me he bought me my first cast iron skillet and I am so in love with it. I have now been wondering how I ever lived without it. The first thing I wanted to try it out with  was something baked. I just knew my yummy fall apple carrot cake would be great in it, if you don’t have a skillet you can make this Skillet Apple Carrot Cake in two 9 by 5 baking pan.

Skillet Apple Carrot Cake Ingredients
- 2/3 cup coconut oil
- 2Â large egg
- 1 cup light brown sugar, packed
- 1/2Â cup granulated sugar
- 1/2 cup Greek yogurt
- 4 teaspoons vanilla extract
- 4 teaspoons cinnamon
- 1 teaspoon ground nutmeg
- 2 cups all-purpose flour
- 1Â Â teaspoon baking powder
- 1Â Â teaspoon baking soda
- pinch salt
- 1Â apple, peeled and chopped
- 1 apple, peeled and sliced
- 1 1/2Â cups grated carrots
Skillet Apple Carrot Cake Directions
- Preheat the oven and skillet to 350 degrees.
- Melt your coconut oil in the microwave for one minute.
- In a large bowl mix the oil, eggs, sugars, yogurt, vanilla, cinnamon, nutmeg.
- In a medium bowl whisk together the flour, baking powder, baking soda, salt, the chopped apples and carrots. Mix the wet and dry ingredients together until combined.
- Remove the skillet from the oven and carefully spray the pan down with some oil.
- Pour the batter into the hot pan and spread it out.
- Top the batter with the sliced apple.
- Bake for 45- 55 minutes, until a toothpick come out clean from the middle.
