Before I share this with you, you can not blame me if they taste so good that you eat until you are stuffed. This is one of those recipes where you eat until you’re full then have just one more for good measure…before collapsing into a food coma.
You can probably skip the food coma if you eat a normal portion of these blueberry cream cheese pancakes, of course, but like I said…that’s going to be hard!
What’s so special about these White Chocolate Blueberry Cheesecake Pancakes?
Well, for starters, they take an already delicious pancake mix and add so many extra surprises that you’re left with something that resembles dessert a little more than breakfast. Dessert for breakfast, anyone?
As you might have guessed, these pancakes are loaded with white chocolate chips, blueberries and cream cheese. I crush up graham crackers for an added crunch and sweetness too.
Though these Blueberry Cheesecake Pancakes are decadent, they are also surprisingly easy to make! All you need to do is stir in all the surprise extras to the pancake mix and enjoy.

What kind of pancake mix should I use?
You can use whatever pancake mix is your favorite! If you’re short on time, there’s absolutely no shame in using a box mix. I like to use my favorite homemade pancake mix. We include the directions for making homemade pancakes, but if you are short on time or ingredients you can totally use boxed pancake mix in place of the homemade, just uses the mix according to the package and add the blueberries, cream cheese, sugar, vanilla and graham crackers.
How To Store Blueberry Cream Cheese Pancakes
These White Chocolate Blueberry Cheesecake Pancakes are definitely best served warm and straight from the pan. However, if you find yourself with leftovers (unlikely!), you can store them in the fridge in an airtight container for 2 days. Just warm before eating.
Tips for Making the best homemade pancakes
Use fresh ingredients. Old ingredients will give you flat pancakes. If you are using a Homemade Pancake Mix that was made ahead of time then you want to be sure that it was stored in an airtight container so everything stays fresh.
Do NOT over mix. You want those clumps in your pancakes, they are vital to making pancakes fluffy. If you over mix the batter you will end up with tough, unfluffy pancakes.
Don’t flip your pancakes too soon (or too late). When you see the bubbles starting to pop flip that pancake over! Overcooking pancakes will also make them tough and unfluffy.
Grease the pan well. It is also important that you grease your pan well. Pancakes will stick to a pan if it is not greased enough.
How to Freeze Pancakes
I like to make large batches of pancakes at a time to make breakfasts during the busy week even easier.
Freezing pancakes is so easy. Just cook your pancakes and allow them to cool. Once they are cooled stack into piles of serving size you normally make. We do 3 pancakes per pile. Wrap each pile with plastic wrap and then put all wrapped piles of pancakes into a gallon size freezer bag and place in the freezer.
To reheat the homemade pancakes, remove a frozen pancake stack and heat in the microwave in the plastic wrap for 30-45 seconds depending on your microwave.

- 3 Cups flour
- 7 teaspoons baking powder
- 2 teaspoon salt
- 1/4 cup sugar
- 2.5 cups milk
- 2Â egg
- 6 tablespoons butter melted
- 2 teaspoon vanilla extract
- 1 cup of graham cracker crumbs
- 1/2 cup cream cheese
- 1 cup blueberries
- 1 cup White chocolate chips
How to Make Blueberry Cheesecake Pancakes
Wash the blueberries. Chop the cream cheese into small chunks. Crush up the graham crackers.
Whisk the flour, baking powder, salt and sugar together in a large bowl.
Combine the milk and egg together in a medium sized bowl.
Add the milk mixture to the dry ingredients, gently stir until combined.
Stir in the melted butter, vanilla extract, blueberries, cream cheese chunks and white chocolate chips.
Heat your frying pan or griddle to medium and pour the batter on a lightly oiled pan, flip when bubbles start to pop.
Cook for an additional two minutes.
