Variations of this recipe
Add fruit. Adding fruit like blueberries, strawberries, raspberries, and bananas are great additions to pancake cupcakes when you are using a plain batter. Add the fruit into the batter after you have mixed it but before pouring the batter into the cupcake tray.
Chocolate chips. Add 1/2 cup of chocolate chips to the pancake mix before pouring the batter into the cupcake tray.
Bacon. Cook 6 pieces of bacon, crumble the bacon and add into the batter after you have mixed it but before pouring the batter into the cupcake tray.
Use homemade pancake mix. You can make this recipe using homemade pancake mix instead of using the boxed pancake mix.

There are a few different ways to serve these cupcake pancakes. Depending on my mood and what the kids want is how I will serve them.
Fresh fruit. Pancakes go well with fresh fruit such as strawberries, blueberries, raspberries, or sliced bananas. You can also serve a fruit salad on the side.
Syrup. Real Maple syrup is a classic pancake topping, but you can also use fruit syrups like blueberry syrup, honey, or agave nectar. You can warm up the syrup in a saucepan or in the microwave for a few seconds to make it more runny.
Butter. Melted butter is a simple but delicious topping for pancakes. You can use salted or unsalted butter, depending on your preference.
Whipped Cream. You can add a dollop of whipped cream to the top of your pancakes to make them more decadent and look like cupcakes.

When we have pancakes I also like to include sides, especially if we are making breakfast for dinner. There are lots of tasty sides to serve with pancakes for breakfast. Some of our favorites are:

Eggs: Pancakes and scrambled eggs make a classic breakfast combo. You can serve them on the same plate or as separate dishes. You can also serve them with hardboiled eggs, jammy eggs, poached eggs or sunny side up eggs.
Fruit. Fruit Salad is a great option but you can also serve your favorite fruit cut up. We like bananas, strawberries, blackberries and really any type of fruit as a side dish.
How to Freeze Pancake Cupcakes
Allow pancakes to cool completely. Place cooled pancake cupcakes on a baking sheet and place in the freezer for 2-3 hours until frozen completely. Once completely frozen place in a freezer bag and store in the freezer.
How to reheat Frozen Pancake Cupcakes
To reheat the homemade pancakes, remove a frozen pancake cupcake and heat in the microwave in the plastic wrap for 30-45 seconds depending on your microwave.
