I Love everything Pumpkin!
When fall comes I start pulling out everything I can that involves pumpkin. Pumpkin Chocolate Chip pancakes have always been my favorite pumpkin breakfast, with a salted caramel pumpkin latte. I thought for sure this year I was going to have to skip it again like last year.
I tried making pumpkin chocolate chip cookies that were low carb but they were a disappointment. I tried so many times that I gave up. It might be because I am picky with the textures and flavors that come with a pumpkin anything.
So were the pumpkin chocolate chip pancakes I tried to create. This year when the chaffle craze started after making lots of different chaffles and coming up with new chaffle recipes, I knew that it was the perfect time for me to create a pumpkin chocolate chip chaffle.
I came up with these pumpkin chocolate chip chaffles and they are delish! I like them topped with swerve confectioners or keto whipped cream!
What is a Chaffle?
A chaffle is the most amazing creation yet to come out in the keto world.
The consistency that comes from cheese and an egg along with spice baked in a dash mini waffle maker or a regular sized waffle maker is perfect!
I knew that I could combine the flavors I love, with the ease of making a chaffle and and that it would hit the spot. I had a few not believe me in my house, but then they took one bite of this pumpkin chocolate chip chaffle and changed their minds. A few of them told me it tasted more like a cookie than a waffle. I am totally ok with that!

Pumpkin Chocolate Chip Chaffle Ingredients
- shredded mozzarella cheese
- Pumpkin Puree. You can use homemade pumpkin puree or canned pumpkin.
- egg
- granulated swerve
- pumpkin pie spice. I love using homemade pumpkin pie spice.
- sugar free chocolate chips
How to Make Pumpkin Chocolate Chip Chaffles
Plug in your waffle maker.
In a small bowl mix the pumpkin puree and egg. Make sure you mix it well so all the pumpkin is mixed with the egg.
Next add in the mozzarella cheese, almond flour, swerve and pumpkin spice and mix well.
Then add in your sugar free chocolate chips
Add half the keto pumpkin pie Chaffle mix to the Dish Mini waffle maker at a time. Cook chaffle batter in the waffle maker for 4 minutes.
DO NOT open before the 4 minutes is up. It is VERY important that you do not open the waffle maker before the 4 minute mark. After that you can open it to check it and make sure it is cooked all the way, but with these chaffles keeping the lid closed the whole time is VERY important.
When the first one is completely done cooking cook the second one.
Enjoy with some swerve confectioners sweetener or whipped cream on top.
Pumpkin Chocolate Chip Chaffles
Ingredients
- 1/2 cup shredded mozzarella cheese
- 4 teaspoons pumpkin puree
- 1 egg
- 2 tablespoons granulated swerve
- 1/4 tsp pumpkin pie spice
- 4 teaspoons sugar free chocolate chips
- 1 tablespoon almond flour
Instructions
- Plug in your waffle maker.
- In a small bowl mix the pumpkin puree and egg. Make sure you mix it well so all the pumpkin is mixed with the egg.
- Next add in the mozzarella cheese, almond flour, swerve and pumpkin spice and mix well.
- Then add in your sugar free chocolate chips
- Add half the keto pumpkin pie Chaffle mix to the Dish Mini waffle maker at a time. Cook chaffle batter in the waffle maker for 4 minutes.
