Pineapple Mojito
I am on a kick trying to bring summer here as fast as possible. I am so ready for warm and sunny days where some can be spent relaxing. I thought the perfect way to give summer a nudge was sharing summer drinks and this Pineapple mojito is perfect! It only takes a few minutes to make and pairs well with just about anything you throw on the BBQ or just because you want to relax with a drink.
I love our Passion fruit mojito but I know it can sometimes be hard to find so I wanted to have a tasty mojito recipe that had an easy to find fruit and pineapple is one of my favorite tropical fruits!
If you are not a fan of rum I have also included how to make this drink a virgin Pineapple mojito so everyone can enjoy this fun, tasty tropical mojito!

What is a Mojito?
A mojito is a cocktail that traditionally consists of five ingredients; white rum, lime juice, club soda, carbonated mineral water or soda water, and mint. To sweeten a mojito you can use simple syrup or sugar. In this Pineapple Mojito recipe, we have changed things up a bit and added some Pineapple fruit that gives it an amazing and refreshing taste.
What does it mean to Muddle when making a Mojito?
When you are new to making cocktails many of the recipes call for muddling the drink and you might be wondering what it means to muddle a cocktail. Muddling is the technique of mashing the herbs and flavors together. Add the ingredients to the bottom of a cocktail shaker and using a cocktail muddler gently mash the ingredients gently 2 or 3 times to release the flavors.
If you do not have a cocktail shaker or a cocktail muddler you can use a glass and the back end of a wooden spoon.
How to Make a Virgin Mojito Cocktail
You can easily make this a Virgin drink by replacing the rum with any sparkling clear soda like Sprite. Any clear lemon-lime carbonated drink will work in place of the rum to keep it a virgin drink.
Fresh, Frozen or Canned Pineapple
I like using fresh pineapple but you can also use canned pineapple drained from the juices, or frozen. If you are using frozen pineapple I highly suggest letting it thaw before using it.
If you are using a fresh pineapple the best way to cut it is using this pineapple corer and slicer. It is so easy to use and makes cutting a fresh pineapple so easy!
How to Sweeten a Mojito
When you are sweetening a mojito you can use a simple syrup, powdered sugar or granulated white sugar.
What to Serve with Mojitos
Relaxing outside and wanting snack foods, try these amazing Sheet pan nachos! Chips with homemade guacamole, restaurant style salsa or fresh tomato salsa are also great choices!

Pineapple Mojito Ingredients
- pineapple chunks
- fresh mint leaves
- lime
- white sugar
- ice cubes
- white rum
- club soda
How to Make Pineapple Mojito
In a tall 10 ounce glass add the mint leave and fresh pineapple using a cocktail muddler, muddle the mint and pineapple.
Squeeze the juice from 1/4 of the lime into the glass then add the sugar and gently mix.
Add the ice to your glass.
Pour in the rum.
Top off with the club soda and gently mix.
Garnish with the lime wedge and additional pineapple if desired.

Pineapple mojito
Ingredients
- 3 tablespoons pineapple chunks
- 8 fresh mint leaves
- ½ lime cut into 2 wedges
- 1 tablespoon white sugar
- 1/2 cup ice cubes
- 1 ½ ounces white rum
- 6 ounces club soda
Instructions
- In a tall 10 ounce glass add the mint leave and fresh pineapple using a cocktail muddler, muddle the mint and pineapple.
- Squeeze the juice from 1/4 of the lime into the glass then add the sugar and gently mix.
- Add the ice to your glass and then pour in the rum and top off with the club soda. Gently mix.
