Peanut Butter Cookies bring back AMAZING memories for me. I remember when I was about five years old sitting on the counter in my mom’s kitchen. She didn’t have all the skills in the kitchen but she was great at making memories. It was always a lot of fun making cookies with my mom.
One of the cookies we made was classic peanut butter cookies. My favorite part was rolling the cookies in the sugar and using a fork to press them down to create the fun pattern on top. Funny thing about it, I still remember sometimes I would squish them down flatter than a pancake. Unfortunately those cookies always ended up hard as a rock because they are so thin but we still had fun.

This Peanut Butter Cookie Frosting is thicker then normal frosting, you will not be able to pipe this frosting on to a cake or cupcakes, however, it does work well as a filling for a cake.
How to Use Peanut Butter Cookie Frosting
Scoop about 1 tablespoon of the peanut butter mixture and use clean, dry hands to form it into a patty. Use the tines of a fork to make the classic crisscross pattern on top of the “cookie”. Repeat with the remaining peanut butter mixture so you end up with 24 “cookies”.
Place the cookie frosting on top of the cupcake gently pressing down so it sticks.
