Pesto Grilled Chicken Kabobs
Coking on the grill during the summer is a must for me. I hate heating up the house, but I also love anything being cooked on the grill. I have to also admit that during the summer I want the easiest meals, I am lazy during the summer and fully admit that. I want to be able to relax, enjoy the nice weather and still have tasty meals that don’t take too much effort. The grill is my best friend during the summer and I use it to cook anything and everything I can.
These Pesto Grilled Chicken Kabobs are easy to make, just make the marinade, let them marinate, pop on some skewers and then grill them. You can prep them in advance so come dinner time there is very little work involved. If you want add veggies you can, if you don’t want to you don’t have to.
Our most recent dinner was pesto pasta salad with these pesto chicken kabobs all made with my favorite homemade pesto recipe. It was devoured by everyone and one of the easiest dinners ever to make.

Variations of this recipe
Add Veggies. If you are wanting to add Veggies to your chicken Kabobs you can. Allow the chicken to marinate and then place the chicken and the veggies on kabob sticks. Green Bell peppers, onions, zucchini, and tomatoes are all great veggies to put on the kabobs with the chicken.
Change up the chicken. I like using chicken breasts but you can also use chicken thighs. If you are using thighs they will be juicier then if you are cooking chicken breasts.
Use the chicken to top a salad. If you are wanting to skip making other dishes to go along with this chicken it is perfect for using on top of a fresh made salad.
Can I make this ahead of time?
Yes, you can marinate the chicken for up to 2 days before cooking, but it needs at least 1 hour to marinate before putting them on the grill.
Can I freeze This recipe?
You can make the marinade, add the chicken and freeze it to meal prep and then remove from the freezer, thaw and then grill them. If you are wanting to freeze the marinated chicken I suggest using a zip close freezer bag. Iit will keep in the freezer for up-to 6 months.

Pesto Grilled Chicken Kabobs Ingredients
- 3 pounds chicken breast, 1-inch cubes
- 1/3 cup pesto
- 1/2 cup parmesan cheese, grated
How to Make Pesto Grilled Chicken Kabobs
Make the homemade pesto and then cut the chicken into 1 inch sized pieces.
In a large bowl add the chicken and pesto and mix well.
Add the chicken and pesto to a zip close bag and seal the bag.
Place the chicken in the fridge for one hour to marinate.
Soak the wooden skewers in water for 20 minutes (to prevent them from burning).
Heat grill to 350°F.
Place the chicken onto the skewers making sure to leave 2 inches on the bottom and top of the sticks.
Place the chicken on the grill. Cook for 3 minutes on each side until the chicken reaches 165°F.
Sprinkle the parmesan cheese onto the warm chicken.
