Monster Eye Ball Sugar Cookies
This year I am all about having fun when it comes to Halloween. Witch finger cookies were the start of it and now we have monster eyeball cookies, both together on a plate will be the perfect gross yet tasty Halloween cookie tray!
My kids love all things gross when it comes to Halloween treats and these monster cookies fit the bill perfectly. One of our favorite sugar cookie recipes turned into a gross looking monster eyeball that is creepy and spooky while being delicious.

Can I use store bought sugar cookie dough to make Halloween Sugar Cookies?
Yes, you can use store bought sugar cookie dough to make this recipe. You will need the food coloring, almonds and icing ingredients in addition to the store bought sugar cookie dough to complete the recipe.
Do I need to use food coloring and make the cookies green?
If you do not like using food coloring you can skip adding it to the sugar cookie dough, they will still look like witch fingers, however I like to make things as fun and themed as possible so I like them best when they are colored green.
Can I make Sugar Cookie dough ahead of time?
You can make sugar cookie dough ahead of time and store it in an air tight container for 3-5 days in the fridge. When you want to make the cookies, remove the dough from the fridge and roll out and shape as desired, and then bake according to the recipe directions below.
How long in advance can you make Halloween sugar cookies with icing on them?
Once the cookies are decorated they will keep for up to 2 weeks as long as they are store properly in an airtight container.
Do I need to add a thumbprint / indent to the cookie ball before baking?
Adding the thumbprint to the cookie dough will depend on how you want the icing to sit. With the thumbprint, you will create a spot for the icing to pool and create more of an eye socket. Without the thumbprint, your icing is more likely to drip down the cookie,
What food coloring should I use to get a good green and red color?
To get a rich color, I like to use Wilton Color Right. They come in a squeeze bottle which makes it much easier to add the food color to whatever you are coloring.
How much dough should I use per eyeball?
For this recipe, I used a 1 1/2 inch ball of dough. You can adjust the size of your cookie to your desired size. You may need to adjust your cooking time accordingly.
Variations of this recipe
Change up the color. Monsters come in all different colors so you can totally make the cookies green like I do or purple, orange or blue if you want to.
Change how many eyeballs. Since monsters don’t always just have one eyeball you can make it look like they have multiple eyes by adding more candy eyeballs to the cookies.
Change up the color frosting. If you don’t want to have red eyeballs then you can leave the frosting white or change the color food coloring you use.
Monster Eyeball Halloween Sugar Cookies Ingredients
Cookie Ingredients
- 3 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup granulated sugar
- 1 cup butter
- 1 egg
- 1 tsp vanilla extract
- Green food coloring
- Eyeball sprinkles
Red sugar icing ingredients
- 1 cup confectionary sugar
- 2-3 tsp water
- Red food coloring
Note: you can also get pre-made red icing gel.
How to Make Monster Eyeball Halloween Sugar Cookies
In a large bowl mix the butter and sugar until fluffy, approximately 5 minutes.
When the butter and sugar are fluffy, mix in the vanilla extract and egg.
In a medium-sized bowl, add together the flour, baking powder, and salt. Use a whisk to mix everything together well.
Slowly add the flour mixture to the sugar, butter, egg, and vanilla extract mixture. Mix everything until well incorporated.
Add the green food coloring and mix well into the cookie dough.
Chill your dough for 10 minutes.
Take a 1 1/2 inch scoop of dough and roll into a ball.
Use your finger to create an indent slightly larger than your eyeball sprinkle.
Place the eyeballs onto a sheet pan lined with parchment paper or a silicone mat, bake at 350 for 20 minutes or until the cookies have browned slightly on the edges.
Move the cookies to a cooling rack and allow them to cool completely.
While the cookies are cooling prepare the sugar icing. Mix together the confectionary sugar, water and red food coloring. Keep adding red food coloring until you reach your desired shade of red. To get a nice deep red, you will need quite a bit of food color.
When the cookies are cooled, add a small amount of sugar icing in the indent of your cookie and place the eyeball sprinkle on top, pressing slightly into the icing.
Set aside to dry, about 5 minutes.
Enjoy your spooky treat.
How to Make Sugar Icing
Combine the confectionary sugar, red food color and water in a bowl and mix well.
Add enough red food coloring till the red is nice and vibrant.
Consistency should be smooth and slightly runny. If you do not want dripping bloody eye sockets, you can make the consistency thicker by using a little less water.
