My family has always loved pizza and any variation of pizza. Normally when we have pizza night I make my homemade pepperoni pizza with homemade pizza crust or cauliflower pizza crust and homemade pizza sauce. However that takes a bit of time and sometimes I do not have the time to do all of that.
My solution for when we are short on time but want pizza is to make english muffin pizza but that doesn’t work well for low carb. We have made pizza bagels at times as well and I just use a keto bagel for mine, but those I have to have time to make the bagels first and they do take a bit of time to make.
I have been enjoying my portobello pizza but I have been wanting something that resembled the floury, carby pizza crust that I do love so much. Bring on Mini Keto Pizza made with pizza waffle crust!
Easy Keto Pizza
This keto pizza recipe is super easy to make. You probably have most of the ingredients on hand already, especially if you have been eating keto or low carb for any amount of time.
You can pick up these mini keto pizzas to eat them, however they are not as solid of a crust as normal pizza crust so I prefer to use a fork when eating them. When the kids ate them, they picked them up, so it is really up to you how you want to eat them.
You can add toppings of your choice to these keto pizzas. Just add them at the same time you add the cheese and sauce before placing them in the oven.

Mini Keto Pizza Supplies
There are are few things that will make making Mini Keto Pizzas easier.
Dash Mini Waffle maker. I currently have just 1 mini waffle maker, but will bet getting another one so that I can make 2 at time to speed things up a bit in the kitchen.
Toaster Oven. Using my toaster oven to bake things when I am using the other oven for my kids english muffin pizzas worked out best. You can use a regular oven, but that will need to be preheated. I have this Toaster oven Air fryer combo that works perfect for cooking so many different things.
Mini Keto Pizza Ingredients
- Shredded Mozzarella cheese
- almond flour
- baking powder
- eggs
- garlic powder
- basil
- low carb pasta sauce
How to Make Mini Keto Pizza
Heat your mini waffle maker.
While the waffle maker is heating up, in a bowl mix mozzarella cheese, baking powder, garlic, basis, egg and almond flour.
Pour 1/2 the mixture into your mini waffle maker.
Cook for 3-5 minutes until your pizza waffle is completely cooked. If you check it and the waffle sticks to the waffle maker let it cook for another minute or two.
Next put the remainder of the pizza crust mix into the waffle maker and cook it.
Once both pizza crusts are cooked, place them on the baking sheet of your toaster oven.
Put 1 tablespoon of low carb pasta sauce on top of each pizza crust.
Sprinkle 1 tablespoon of shredded mozzarella cheese on top of each one.
Bake at 350 degrees in the toaster oven for roughly 5 minutes, just until the cheese is melted.

Nutrition information is for 1 pizza chaffle, i was full after 1 so I considered a serving 1 pizza. If you are eating 2 just double the nutrition information to count your macors.

I didn’t pay close enough attention when ordering my mini waffle maker and ended up with a mini grill. I tried the chaffle recipe in it today, Perfect buns for the burger I made in it. I like it better than what I made in my standard waffle maker. One of the better “mistakes” I’ve ever made!

Substitute 1 tsp coconut flour (or 1 1/2) for the tbsp of almond flour.
