My husband grew up eating Beef Stroganoff and while I like to keep things classic I also like to change things up. I make one pot Stroganoff and this meatball Stroganoff often because they are so easy to make. With the classic flavors of Stroganoff with tender and juicy homemade meatballs, this recipe is the perfect dinner recipe.

What is Beef Stroganoff?
Beef Stroganoff is a classic Russian recipe that has sautéed beef in a creamy mushroom sauce that is typically served with noodles. There are many variations of this recipe, but this one takes a fun twist and uses homemade meatballs that are amazing! I have a delicious one pot beef stroganoff recipe that I love making and my family loves, but I also love changing things up and when I want a beef stroganoff with a twist I make this Meatball Stroganoff recipe.
What to Serve with Beef Stroganoff
Because there is pasta in this dish I like to keep the sides bright colors and on the lighter side. Sometimes we make baked potatoes or mashed potatoes but normally it is a green something. You can make the sides as easy as you want to, a bag of steamer veggies like green beans or broccoli are easy to make sides. You can also make a fresh salad. My kids like it when I make them a bread or a roll to dip in any extra sauce that is on their plates too.

What type of noodles can I use?
I prefer to use egg noodles, but you can use just about any dry pasta noodles when making it.
How to Store Leftovers
Leftovers need to be stored in the fridge in an airtight container. They will keep in the fridge for 3-4 days.
Variations of this recipe
Change up the meat. I like using ground beef and ground chicken as my meats to use when making the meatballs but you can also use ground pork, ground turkey, ground chicken or whatever combination you want to instead. I like using a high quality ground beef like ground sirloin as I think the ground sirloin and the ground chicken together make the best flavor.
Change up the spice. If you want more of a spicy kick in your meatballs then you can add more red pepper flakes, if you do not want any spice then you can skip them.

Meatballs Ingredients
- onion
- ground beef
- ground pork, turkey or chicken
- bread crumbs
- salt
- Italian seasoning
- red pepper flakes
- garlic
- Parmesan cheese
- Extra virgin olive oil
Stroganoff Sauce Ingredients
- olive oil
- beef broth
- kosher salt
- black pepper
- Italian seasoning
- mushrooms, sliced
- whole milk
- cornstarch
- sour cream
- cream cheese
How to Make Meatball Stroganoff
Combine the chopped onion, beef, turkey, bread crumbs, salt, Italian seasoning, red pepper flakes, garlic, and Parmesan cheese. Using your hands mix well.
Shape the mixture into one inch balls.
Bring a large pot of water to a boil for your noodles.
Add your oil to a skillet and heat it over medium heat. Brown the meatballs in the skillet.
Once your meatballs are cooked you will deglaze the pan with your beef broth.
Stir in your salt, pepper, Italian seasoning and mushrooms.
Let your meatballs simmer for 10 minutes.
Meanwhile, cook your noodles as per the direction on the packaging.
Create a slurry with milk and cornstarch. Add the mixture to the meatballs and bring it to a boil to thicken.
Stir in your sour cream and cream cheese.
Sever the meatballs and sauce over the noodles.

Ingredients
- 1/4 cup onion chopped
- 1 pound ground sirloin
- 1 pound ground turkey or chicken
- 1/2 cup bread crumbs
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. Italian seasoning
- 2 cloves garlic grated
- 1/3 cup Parmesan cheese
- Extra virgin olive oil
- 1 Tbsp olive oil
- 2 cups beef broth
- kosher salt to taste
- black pepper to taste
- 4 tsp Italian seasoning
- 1 cup sour cream
- 4 oz cream cheese
- 1 cup whole milk
- 1 tablespoon cornstarch
- 1 pound Wide egg noodles
Instructions
