If you are looking for a fun cupcake for the kids St. Patrick’s Day then you are going to love these Lucky Charm Cupcakes. These cupcakes can be made with a boxed cake mix or homemade cupcakes, filled with dehydrated marshmallows and topped with an awesome marshmallow frosting.
If you have been around for a bit you know I take every opportunity to have a celebration even when it is the tiniest of holidays like St. Patrick’s Day. Yes I go over board. No I don’t apologize for it. Making holidays fun for my kids is something I love to do and I hope that it is something that they carry on with their kids later in life.
Another holiday is almost here and we are at it again makings fun. While these Lucky charms cupcakes are great anytime you want a fun cupcake, they are perfect as a St. Patrick’s Day dessert.
For these St. Patrick’s Day cupcakes I wanted them to explode with fun. I wanted something more then just a cupcake with frosting on top. To change things up I have made them a filled cupcake, and they are filled with cereal marshmallows. Tip – Save yourself the headache of picking them out of the Lucky Charms cereal and just grab a bag of the dehydrated marshmallows on Amazon.
For St. Patrick’s Day our normal menu consists of corned beef and cabbage or Bangers and Mash, Irish Soda bread and a St. Patrick’s Day dessert. Our dessert changes dependent on my mood or what the kids ask for and sometimes we have more then one dessert.

Tips and Variations
There are lots of ways that you can change up these cupcakes to meet your personal flavor favorites. You can change the cupcake flavor, and the frosting.
Cupcake Flavor
You can use just about any cupcake recipe that you want to. I personally prefer using a white cupcake so I can color it green with food coloring if I choose to. If you are wanting a white cupcake I suggest using bakery style vanilla cupcakes or almond cupcakes.
You can also use a boxed cake mix if you want to, but I do suggest you make you boxed caked mix taste like a bakery cake with the bakery cake mix trick to have an amazing cupcake.
You can also use homemade chocolate cupcakes, or peanut butter cupcakes.
Frosting
I have included a marshmallow cream frosting with this cupcake recipe and we like like to have the frosting drip over the edge of the cupcakes. If you are wanting a fuller frosting topping, use the Marshmallow Buttercream Frosting instead of the one included in the recipe.
If you wanting to have the frosting be green you can also color it with green food coloring.
Tips for Making Cupcakes
Do not over mix. Over mixing the batter will lead to having tough and flat cupcakes. When making these angel food cake cupcakes you have to be careful that you don’t over mix the batter when you are folding in the flour mixture. If you over-mix your angel food cake batter your cupcakes will turn out flat.
Allow cupcakes to cool completely. Before putting in the marshmallows and frosting the cupcakes let them cool completely. If you frost cupcakes while they are still warm then the frosting will melt.

- 24 cupcakes
- 1/4 cup softened Butter
- 7 ounces Marshmallow Cream
- 2 1/2 cup Powdered Sugar
- 1 to 2 tablespooons Milk
- 1 cup Lucky Charms cereal
- 1/2 cup Lucky Charms cereal marshmallows
- Green Decorating sprinkles
Lucky Charms Cupcakes Directions
Bake your cupcakes and let them cool.
Make the Marshmallow Cream Frosting.
Combine the butter and marshmallow cream in a bowl and use your stand mixer or use a hand mixer and mix until blended well.
Then slowly add the powdered sugar and mix well, then gradually add the milk until the icing is a thin consistency. For these a little bit runnier then normal gives them more of stylish look to go along with the marshmallow icing theme.
Assemble the Cupcakes.
Using a knife cut a small square in the center of each cupcake and fill with lucky charms marshmallows. Then cut off inner part of removed “plug” and replace in cupcake.
Frost the cupcakes with the frosting.
Then top with Lucky Charms cereal pieces and Green Decorating sprinkles.
