Allow everything to cool enough. Potato salad is best served cold. You don’t want to stick hot potato salad in the fridge, be sure to allow the potatoes to cool enough before adding the rest of the ingredients and to cool it enough after mixing everything together.
Add the potatoes to cold water then boil. You may have been told forever to boil the water then add the potatoes. Trust me and do it with adding them at the same time, this way all of the potato is cooked evenly.

- red onion diced
- shredded cheddar cheese
- salt

Loaded Bacon Ranch Potato Salad Recipe Directions
Wash the potatoes and cube. If you want to peel the potatoes you can but it is not a must.
Fill a pot with cold water and add the potatoes to the water.
Over high heat bring the potatoes to a boil and boil potatoes in a pot until they are soft enough that you can stab them with a knife easily about 15 minutes), then drain.
Let the potatoes cool for 30 minutes.
While potatoes are cooling cook bacon on the stove until crispy then drain on a paper towel and once cooled crumble into little pieces and set aside.
Dice the large red onion and shred the cheese if needed and set aside.
In large bowl mix potatoes, bacon, cheese, onion and ranch dressing. Mix everything well and be sure everything is coated well with the ranch dressing.
Put the potato salad in the fridge for about 30 minutes to cool the rest of the way.
After the potato salad has cooled completely top with green onions and additional cheese if desired before serving.

I love this recipe, I have been wanting to make a potato with some filling added. This is right up my alley, I love baked potatoes and bacon, so this will be a treat. Good for lunch, I’ll just cook the bacon ahead of time and put in fridge. Thanks for sharing.
