I love making homemade pies. During the fall we go apple picking and end up with a lot of apples, that is my que to bring on the apple pie. I make apple pie all year long however in the fall I make apple pie as often as I can. I do have my homemade Apple pie that everything is all cooked and baked at the same time.
However as much as I love that one I also love making this apple cinnamon pie that makes th epie filling separately and then it is added to the pie crust. What is a lattice crust?
A lattice pie crust is a weaved pie dough. strips of pie crust dough are laid on top of the pie once the bottom crust is filled with pie filling and layered under each other to create a weaved appearance.
Best Apples to Use for homemade apple pie
When you are making an apple pie you want the apples to be firm so they hold their shape when you are making the cinnamon apple filling and then baking the pie. When I am making apple pie I prefer to use a mix of Granny Smith apples and Cortland apples. You can also use Russet Apples, Honeycrisp, Golden Delicious, and rome.
Can I make lattice pie crust with refrigerated pie crust?
I love making homemade pie crust and much prefer it, however you can use store bought pie crust for this easy cinnamon apple pie recipe.
If you are using a store bought refrigerated pie crust you will use the one crust as the bottom and then you can use the second pie crust dough to make a lattice crust. All you have to do is roll the pie crust dough out into a thin circle then take a ruler and cut 1 inch strips. Use those one inch strips to form the lattice crust.
What Pies Are Best for a Lattice Pie Crust?
While I love making apple pie with a lattice pie crust you can also make blueberry pie and cherry pie with lattice pie crust.
How to Store Apple Pie
Storing homemade apple pie is easy. You can leave it at room temperature for up to 2 days uncovered. If you have sliced the pie then cover it with plastic wrap and leave it on the counter. If you want to extend the life of the easy homemade apple pie then place it in the fridge, apple pie will keep in the fridge for up to 5 days.
Can you Freeze Apple Pie?
If you are wanting to freeze this apple pie recipe, Allow the pie to cool completely and then wrap tightly with plastic wrap and then stick in a large zip close bag. Apple pie will keep in the freezer for up to 4 months.
If you are wanting apple pie filling that you can freeze, I suggest making my homemade apple pie filling and freezing it, then defrosting that and making apple pie that way.
Tips for successful lattice pie crusts
Use a strong pie crust. You want to use a pie crust that will hold up to being moved around while you are forming the lattice top.
Work with cold pie crust. I find it best to chill the pie crust dough that I am going to be using to make the lattice design with before doing it. This will make shaping it on top of the pie easier and less likely that the pie crust dough will be floppy. As the dough warms up it will be come fragile and heard to work with. If that happens put the dough in the fridge for a few minutes to chill it again.
Add filling a little higher than the pie crust. As fruit pies bake the fruit shrinks a bit, so if the pie filling is a little bit above the pie crust when it bakes it will be a flat top instead of a sinking top.
Work fast. The dough will get warm as it is worked with so you want to move kind of quickly when making the lattice design. Don’t stress if it is not perfect, it will still taste delicious.

- Pie crust
- All-purpose flour
- Apple Pie Filling
- Egg Wash
- Raw or sanding sugar
Cinnamon Apple Pie filling Ingredients
- 4 cups apples, peeled and sliced
- 2 tablespoons lemon juice
- 1/2 cup white sugar
- 1 cup water
- 2.5 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Lattice Pie Crust Ingredients
- 2 1/2 cups all purpose flours
- 1 teaspoon sugar
- 1/4 cup all purpose flour (for rolling out the pie dough)
- 1 teaspoons salt
- 1 cup of butter, cut into 16 tablespoon sized pieces
- 1/4 cup to 1/2 cup ice water
Egg Wash for apple pie Ingredients
- 1 egg
- 1 teaspoon water
Apple Pie filling directions
Wash and dice the apples.
Toss the apples with the lemon juice, set aside.
In a large sauce pan whisk together the water and cornstarch until well combined. Stir in the cinnamon and nutmeg.
Add your apples to the pan and cook over medium low heat until they are tender, about 15 minutes.
Allow mixture to cool for about 20 minutes before placing in a pie crust.
While the pie filling is cooling make your pie crust.

In a large bowl whisk together the flour, sugar and salt.
With a pastry cutter or your fingers work the butter and flour mixture together until it looks like small pebbles.
Add the water little by little and mix with your hands until the dough comes together.
Divide the dough into two equal balls and press flat onto plastic wrap.
Chill the dough for at least an hour.
How to Make Egg wash
Crack the egg into a small bowl and then add the water. Using a whisk, whisk the egg and the water together.

Preheat the oven to 500 and place an empty metal baking sheet in the oven.
Lightly flour your working surface and roll out half of your dough, turn it a few inches after a few rolls to achieve a round shape. If it starts to stick add a little extra flour.
It should be a little larger than your pie plate. Roll the dough around your rolling pin to easily place the dough into the pan.
Using a pairing knife or kitchen shears to trim the dough to a one inch over hang.
Fill your pie with homemade cinnamon apple pie filling and set it aside.
Lightly flour your working surface and roll out the second half of your dough, turn it a few inches after a few rolls to achieve a round shape. If it starts to stick add a little extra flour. It should be a little larger than your pie plate.
Take the ruler and cut the dough into one inch strips with a pizza wheel.
Make the egg wash.
Brush the edges of the pie crust that is in the pan with the egg wash, save the remaining egg wash.
Lay out five of the crust strips across the top of the pie leaving one inch gaps.
Pull Back the 2nd and 4th strip and lay one strip vertical. Than place the strips back in place.
Pull Back the 1st, 3rd and 5th strip and lay one strip vertical. Than place the strips back in place.

Fold the dough that is hanging over the edge under and seal to for an edge.
Using your finger tips and knuckles crimp the edges.
Brush top of the crust with remaining egg wash and sprinkle with sugar.
Cover the pie with tin foil and place the pie on the hot baking sheet in the oven then reduce the temperature to 425 degrees.
Bake until the top crust is golden brown, this should take 20-25 minutes.
Remove the tin foil once the top is golden brown, rotate the baking sheet, and turn the temperature down to 375 degrees. Bake another 30-35 minutes, until the top crust is a deep golden brown.
If at any time the top starts getting to dark put tin foil back on top of the pie.
Remove the pie from the oven and allow it to cool for 30 minutes before serving.
