I love pork tenderloin, my dad makes one that is amazing and I love having it for dinner. However anytime I bake pork tenderloin it ends up dry and everyone in the house gives me a big thumbs down. When I got an instant pot I put off trying out making pork tenderloin in the Instantpot for fear that I would have the same thing happen.
Well, to my surprise I had a juicy pork tenderloin that everyone in the house gave a big thumbs up for! Finally I had a pork tenderloin recipe that was a winner in the house and it is the one I have stuck with making anytime I buy pork tenderloin.

Pork tenderloin is the muscle underneath the backbone, which is a boneless lean, tender and mild flavor cut of pork. This cut of pork is also relatively small in size, and is a thin, long round cut of pork. While it is a tender part of the meat, the struggle is that it can easily be overcooked.
Since it is easy to overcook, the plus side is that it is quick to cook, and quick to get to the right temperature which makes pork tenderloin perfect for a quick and easy weeknight meal when you have a busy household like ours.

What Temperature for Pork Tenderloin
You want the pork tenderloin to reach an internal temperature of 145 degrees. I have found that the cooking time of 7 minutes in the InstantPot has given me that or slightly higher each time I have cooked it this way. You will want to use a meat thermometer to make sure that your pork tenderloin has reached the fully cook temperature of 145 degrees or more.

Instantpot Pork Tenderloin With Gravy Ingredients
- 1 pound pork tenderloin
- 1 teaspoon oregano
- 5 cloves garlic, minced
- 2 tablespoons fresh rosemary, minced
- 1 1/2 cup chicken stock
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
- 1/2 cup heavy cream
- 1 tablespoon cornstarch
- 1 tablespoon water
How to Make Instantpot Pork Tenderloin With Gravy
In the pot of your instant pot, combine the garlic, rosemary, oregano, and chicken stock. Place the metal riser into the pot.
Remove the fat and silver skin from the pork tenderloin. Rub the pork with the garlic, salt, and pepper. Place the pork into the Instantpot.
Place the lid on and set the cooker for 7 minutes. Allow the steam to release naturally.
Remove the pork from the pot.
Turn the instant pot to saute high and pour in the heavy cream. In a small bowl, mix the cornstarch and water. Add the mixture to the pot and whisk until it comes to a boil.
Serve the pork tenderloin with gravy poured over it.

- 1 pound pork tenderloin

I made this tonight. The pork tenderloin was perfect. The sauce was horrible. 2 tablespoons Rosemary was too much. I will not make the sauce again
