When winter comes around cooking soup is something I love to do. Soup is a meal that warms you up while eating it and a flavorful soup can turn the whole cold day around. I love making soup in the winter but I have a confession, it was not until recently that I even had lentil soup.
I am not sure why, but the word lentil was not something that sounded appealing to me. Then I had lentil soup a friend of mine made and I was hooked. She made a stove top version, but I wanted something that was quicker to make so I set to work with some lentils, veggies, and pantry staples to come up with a tasty lentil soup recipe for use to enjoy this winter.
It was so well loved in my house I knew I had to share with amazing soup recipe with all of you. This easy lentil soup is so simple, hearty, and delicious! You couldn’t ask for an easier or healthier recipe!
It took me a while to love my Instant pot, but now that I have been using it for a while I have realized that Instant Pots are amazing for soup. It makes making super so easy and I can get dinner on the table faster than making stovetop soup. If you are nervous about getting an Instant Pot, trust me on this, you want one. It makes cooking so much easier and many things are done so much faster.

Variations of this Recipe
Change up the flavors. This soup is delicious as is, but if you would like to change the flavor and travel around the world, here are my recommendations:
- Indian Flair: Add 1 teaspoon of curry, 1 teaspoon of cumin, and ½ teaspoon coriander.
- Moroccan Flair: Add ½ teaspoon cinnamon, ½ teaspoon allspice, and 1 teaspoon cumin.
- Asian Flair: Add 1 teaspoon dry ginger, 1 teaspoon onion powder, and 1 teaspoon garlic powder.
Use frozen veggies. If you are short on time then you can use frozen prechopped veggies instead of fresh veggies.
Change up the lentils. I used green lentils, but you can also use brown lentils or red lentils.
Change up the broth. I used vegetable broth but you can also use chicken broth instead.

No lentils do not need to be soaked, they do need to be rinsed off before cooking though.

This vegetarian lentil soup needs to be stored in the fridge or freezer. Put the soup into an airtight container and store in the fridge.

This homemade lentil soup will keep in the fridge for 4-5 days, which makes it great for meal planning. You can then reheat this soup in the microwave or in a pot on the stove.

Yes! This recipe is perfect for freezing. You can freeze it in individual portions or a large portion.

You can freeze this homemade soup recipe for up to 3 months. When you are going to enjoy this soup after being frozen, make sure you thaw it overnight. Thawing the soup overnight keeps the vegetables, and lentils from getting soggy. You can then reheat this soup in the microwave or in a pot on the stove.
Instant Pot Lentil Soup Ingredients
- 1 tablespoon olive oil or vegetable oil
- 1 large onion diced
- 3 large carrots sliced
- 3 stalks of celery sliced
- 1 ½ cups uncooked green lentil
- 28 ounces canned diced tomatoes
- 8 cups vegetable broth
- Salt and pepper to taste
- ¼ cup chopped fresh parsley
How to Make Instant Pot Lentil Soup
Wash and chop the carrots, celery, and onion.
Press sauté mode and use the saute function on the instant pot and add the oil.
Once the oil is hot, add the onion, carrot, and celery and sauté for 5 minutes.
Cancel the sauté mode and add the lentil, diced tomatoes, broth, salt, and pepper, stir to mix.
Close the lid of the instant pot and place the valve in the seal position. Select manual high pressure, and add 12 minutes. The pressure will take about 20 minutes to rise and start cooking.
After 12 minutes, release the pressure immediately, and open the lid carefully.
Stir in parsley and serve.
