In a small pot, whisk together the milk, sugar, and cornstarch. Place the pot over medium heat and cook until the mixture has thickened. Making sure to keep stirring to prevent the mixture from burning.
Place your egg yolks into a medium mixing bowl. Once the mixture has thickened, slowly whisk about ½ cup of the milk mixture into the egg yolks. Whisk the egg yolk mixture into the milk mixture.
Return the milk mixture to medium heat and cook the mixture For just one minute.
Remove the pudding from the heat and stir in the vanilla and butter. Whisk until the butter is well incorporated.

My lack of confidence in the kitchen has allowed me to live into my 60’s, never having made vanilla pudding from scratch. Until tonight. But, the instruction to temper eggs almost scared me away completely. I just couldn’t bring myself to do it but I had milk that had to be used up or go to waste. Sooooo, I beat the egg yolks and added them to the cold mixture at the beginning. I mixed everything very well, used medium heat, stirred constantly and, in a matter of minutes, ended up with perfect vanilla pudding. No box! You cannot imagine how excited I am! Someday, I may find the courage to try to temper eggs but, tonight, I feel like a rock star! Thank you SO much for the inspiration (even if I didn’t follow your instructions exactly).
