Mix dry ingredients first. In a mixing bowl, whisk together the flour, baking powder, and salt. Sifting the flour can also help to make the pancakes lighter and fluffier.
Do NOT over mix. You want those small lumps of batter in your pancake mix, they are vital to making pancakes fluffy. If you over mix the batter you will end up with tough, unfluffy pancakes.

Yes! If you want to mix the dry ingredients ahead of time and store them for making pancakes later you can. Just mix all of the dry ingredients and store them in an airtight container.

In a large mixing bowl combine the dry ingredients and mix well with a whisk. Then store the pancake mix in an airtight container. A glass jar or a plastic container with a tight-fitting lid works well. Make sure the container is clean and dry. Eggs: Pancakes and scrambled eggs make a classic breakfast combo. You can serve them on the same plate or as separate dishes. You can also serve them with hardboiled eggs, jammy eggs, poached eggs or sunny side up eggs.

How to Store Frozen Pancakes Loose in a Freezer Bag
- Let the pancakes cool. After cooking the pancakes, let them cool down to room temperature before freezing. This will prevent them from getting soggy when they are frozen.
- Place pancakes in a single layer on a baking sheet: Place the cooled pancakes in a single layer on a baking sheet or a plate. Make sure that the pancakes are not touching each other.
- Freeze the pancakes. Put the baking sheet or plate with the pancakes in the freezer and let them freeze for about 1-2 hours. This will prevent the pancakes from sticking together when they are stored in a container.

To reheat the frozen pancakes, you can use a toaster, microwave, or oven. Toaster and oven methods will give you a crispy texture, while the microwave will make the pancakes softer.
We prefer to heat them in the microwave as we like our pancakes softer. It takes about 45 seconds to 1 minute to reheat the stack of 3-4 pancakes while still wrapped in the plastic wrap. If you are reheating individual pancakes place them on a plate and heat in the microwave for 30 seconds to 1 minute depending on how many you are reheating.

Heat a medium sized skillet over medium heat to heat up the pan or if using a griddle heat griddle to medium heat, then add a small amount of butter or spray the pan with nonstick spray.
Turn the pan down to medium-low heat and pour the pancake batter into the pan. You can make full sized pancakes or silver dollar pancakes.
When the pancake bubbles form around the edges of the pancake, gently flip the pancake over to finish cooking.

Always have used vanilla in my homemade pancake recipe. I also melt 4 tablespoons of butter, add 1 egg and use brown sugar instead of cane. Whisk together. Then instead of liquid buttermilk, I use powdered, since I would throw away the leftover buttermilk and add it to the dry mixture. For a special treat, I sometimes add Carnation Malt Powder for extra “Malted” flavor. Yummmmm!!

This recipe turned out way too thick. I had to add an additional 1/2 cup of milk in order for it to be scoop-able. For the first pancake, we had to use a spoon to flatten it out, since it was so thick.

Yea this didn’t work for us either, the batter was really thick and gummy, similar in consistency to cookie dough. We tried putting them in the pan and they would not spread and ended up adding almost a cup more of milk.

This is my new go-to recipe for pancakes. I won’t buy a mix anymore after trying these. Only thing I do differently is that I prepare the pancake batter before cooking the bacon and sausage. If the batter sits for a little, the pancakes are even fluffier. And this last time, I forgot to add the melted butter and they still turned out great.
