To make this easy chicken dinner recipe you are going to need an instant pot. If you do not have one, I am going to warn you now that once you have one in your home you are going to LOVE it! If you are on the fence about if you should get one I am going to tell you that you should. I bought mine and had it sit in the cabinet for a few months before using it and wish I had not waited so long. It makes cooking delicious recipes super quick and easy.
This instant pot chicken recipe is a simple recipe that has amazing flavor. All you do is cook the chicken with seasonings in the instant pot, shred the chicken and mix the shredded chicken into the green chile sauce and mix well. What is also great about this chicken instant pot recipe is that if you want it spicier, just add an extra can of green chile. Want it less spicy? Just add 1/2 a can of chilis instead of a full can or use mild green chiles.

Can I freeze the cooked chicken?
Yes. If you are wanting to meal plan and make it so you can just pull out a meal, heat it up, and get dinner on the table this one freezes great. Just allow the chicken to cool completely once it is done cooking and then store in zip close freezer bags or airtight container and store in the freezer.
When you are ready to use it you can thaw it in the fridge over night or in the microwave. To reheat we just put it in a microwave safe bowl and reheat it.

How to make Green Chile Chicken in the InstantPot
Place chicken breast, chicken stock, cream cheese, garlic, cumin, black pepper, salt, and green chiles into the pot of your Instant Pot.
Place the lid on with the seal shut. Turn it on manual pressure for 12 minutes. Let the steam naturally escape for 12 minutes.
Remove the chicken from the pot and turn the Instant pot to sauté high for ten minutes, stirring occasionally. While the sauce is coming to a boil shred your chicken.
Once the sauce has reduced in half add the shredded the chicken back into your pot and mix well with the sauce.
Serve as desired.

Ingredients
- 2 pounds boneless skinless chicken breast
- 1 cup chicken stock
- 8 oz cream cheese
- 1 teaspoon garlic minced
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1- 4.5 oz can of green chilies chopped
Instructions
- Place the chicken breast, chicken stock, cream cheese, garlic, cumin, black pepper, salt, and green chilies into the pot of your Instant Pot.
- Place the lid on with the seal shut. Turn it on manual pressure for 12 minutes. Let the steam naturally escape for 12 minutes.
- Remove the chicken from the pot and turn the Instant pot to sauté high for ten minutes, stirring occasionally. While the sauce is coming to a boil shred your chicken.

- Serve over your favorite vegetables or over rice.

I made this today and it was delicious!! Kids loved it (we did green beans with it),tomorrow we will try the leftovers in tacos.
I left it with NPR for about 25 minutes since I was busy in the kitchen. The chicken was moist and was braking easily for shredding! Best consistency of chicken I had out of the instapot yet.
We will make it again!!
