So many people loved our Taco Soup Crockpot Recipe but wanted to have a stove top version. So we set to work and came up with this Stove top Taco Soup Recipe.
You won’t even realize this delicious Taco Soup is low carb and Keto friendly. Even better, it tastes so good that even your nonketo family members have no clue that they are eating low carb for dinner with you!
Taco night has always been a thing in our house, however to keep us from getting bored with meals I have always changed things up. Not all of our taco variations are keto friendly but most of them are thankfully like this Easy Taco Soup Recipe.
I don’t have time for super hard recipes during our crazy busy schedule that this Easy Taco Soup Recipe is thankfully one everyone in my house enjoys. Plus this Easy Taco Soup Recipe is low carb and Keto friendly, so I only have to make one meal for dinner.
Whenever I make Taco anything I always use homemade Taco Seasoning. If you are using a homemade taco seasoning recipe that calls for cornstarch, to keep it low carb just omit the cornstarch. You can buy the packets but I have found the flavors are much better when I make my own. I make a big batch of it and store it in a spice jar.

Keto Taco Soup Ingredients
- Ground beef
- onion
- garlic
- taco seasoning
- rotel with diced tomatoes
- diced green chilis
- Beef Broth
- salt
- Pepper
- chili powder
- cream cheese
- Cheddar Cheese
How to Make Easy Taco Soup
Making keto taco soup is so easy! All you have to do is prep your you ingredients. Then cook your ground beef. Once the ground beef is cooked sauté your minced garlic and onion in the pot.
Once the onion is cooked until soft, add in the browned beef, taco seasoning, Rotel, green chilies, beef stock, chili powder, salt, and pepper.
Bring the soup up to a boil then cover and reduce it to low for 1 to 2 hours and let it simmer away cooking all the goodness.
Right before serving add in the cream cheese and cheddar cheese and mix well until it is all incorporated in the soup.
Serve with a spoonful of sour cream and additional shredded cheddar cheese on top if you would like.

Easy Taco Soup
Ingredients
- 1 pound ground beef
- 2/3 cup onion about one small onion
- 2 tablespoon garlic minced
- 2 tablespoon taco seasoning
- 10 oz Rotel with diced tomatoes
- 4 oz diced green chilies
- 4 cups beef broth
- 1/2 teaspoon chili powder
- salt to taste
- pepper to taste
- 8 oz cream cheese sliced
- 1 cup shredded cheddar cheese
Instructions
- Brown the beef in a medium stockpot over medium heat, once browned remove the beef from the pot and drain it on a plate lined with paper towels.
- Add the oil to the bottom of the pot with the onion and garlic, cook until they are softened.
- Add in the browned beef, taco seasoning, Rotel, green chilies, beef stock, chili powder, salt, and pepper. Bring the soup up to a boil then cover and reduce it to low for 1 to 2 hour.
- Right before serving stir in the cream cheese and cheddar cheese until the cheese is incorporated.
- Top with extra cheese and sour cream if desired.

I am just wondering the taco soup says add the cream cheese and cheddar cheese yet I am not seeing the amount of cheddar cheese and cheddar cheese isnt even listed in the ingredients? Yet the finished soup looks cheesy? I have the soup cooking now and have no clue how much to add in and luckily I still have some cheddar on hand. Please correct your recipe as soon as possible. I’ll have to wing it this time.
