Cheesy Baked Taco Dip
This warm taco dip is so cheesy and so gooey it is the perfect taco dip. It has all the flavors you love about tacos in a dip that carries nicely on a chip as you eat it.
I first made this cheesy baked taco dip years ago for my husband to bring to a work party. Last minute he told me he was in charge of a dip and being that he doesn’t know how to cook well left it up to me. Since I had no plans on making a dip that day I hadn’t gone to the store. I looked thru the fridge and pantry to see what I had and came up with this easy taco dip that everyone loved. Ever since he brought it the first time, they asked me to make it for every work party. Thankfully I wrote down the instructions while making it.
What to Dip in Taco Dip
There are lots of things you can use to dip in taco dip. My favorite thing to dip is tortilla chips, however if you are low carb then you can totally dip veggies in this dip for an amazing snack!
- Tortilla chips
- potato chips
- Sliced veggies including celery, cucumbers, and bell peppers
- Pork Rinds
- sliced baguette
- bread sticks
- toasted bread
Variations of this recipe
Add olives. Before going into the oven this can also be topped with black olives.
Add veggies on top. Once out of the oven you can top this with shredded lettuce, diced tomatoes if you want to.
Make it spicy. If you want a bit of a kick add some sliced jalapeno peppers.
Change up the meat. If you are not a fan of ground beef you can use ground chicken or ground turkey in this recipe.
Add more beans. If you want to skip the meat you can use black beans and kidney beans instead of ground beef. If you just want more beans you can add them with the ground beef as well.
Can I make this in a Slow Cooker?
If you don’t want to bake it in the oven you can make it in a slow cooker. Follow the directions until the baking step and put all the ingredients in the slow cooker and cook on low for 2 hours or until all the cheese has melted. Then turn the slow cooker to warm to keep it warm.
Can I make this dip ahead of time?
Yes! You can prep this dip following all of the steps except for baking and then bake when you are ready to serve. It will keep in the fridge for up to 2 days unbaked.
How long will this Dip Keep?
After serving you can store this dip in the fridge for up to 3 days in an airtight container. To reheat just pour into a baking dish and reheat in the oven or heat in the microwave.
Cheesy Baked Taco Dip Ingredients
- 1 pound of ground beef
- 1 small onion diced
- 1/2 small green bell pepper diced
- 5 tablespoons homemade taco seasoning
- 1 can refried beans
- 12 ounces cream cheese spread
- 2 tablespoons milk
- 8 ounces tomato sauce
- 8 ounces sour cream
- 8 ounces diced canned tomatoes (optional)
- 8 ounces package of 4 cheese Mexican blend shredded cheese
How to Make Cheesy Baked Taco Dip
Preheat oven to 375 and grease 9×13 baking dish and set aside.
Dice the onion and green bell pepper and set aside.
In a small bowl mix the cream cheese spread, 2 tablespoons of milk, and 2 tablespoons taco seasoning and set aside.
In a large skillet over medium high heat, brown the ground beef with the diced onions and diced bell pepper.
Once the meat is cooked, add 3 tablespoons taco seasoning, the refried beans, tomato sauce, and 1 cup of the cream cheese and taco seasoning mixture.
Pour the mixture into greased 9×13 baking dish.
Mix the sour cream and remaining cream cheese and taco seasoning mixture and spread on top.
Drain the diced tomatoes and distribute evenly on top.
Top with the shredded Mexican blend cheese.
Bake at 375 for 20-25 mins covered. Uncover and let cook for about 5-10 minutes.
