Cook the chicken in a skillet on the stove, add the cheesy creamy sauce ingredients to the chicken, pour the ingredients into a casserole dish and then pop the chicken casserole in the oven to cook. When it is done cooking you have a tasty meal that the family can enjoy for dinner.
This Doritos Chicken casserole is one of my family’s favorites and it is one that we make when we want to have a fun meal. This casserole is totally not the healthiest but it sure is tasty. Tender chicken cooked with Mexican seasonings, shredded cheese, and Nacho cheese Doritos combine with a creamy sauce for a Mexican inspired casserole that is bursting with flavor. Top this creamy chicken casserole with diced tomatoes and shredded lettuce if you choose!
My kids call this cheesy chicken casserole Dorito taco salad and tell me it reminds them of walking taco but with chicken and lots of cheese. Delicious casserole. Finding meals that the whole family will love can be a challenge. With this mexican chicken casserole there is cheesy chicken, crunchy Doritos and topped with lettuce and tomatoes. There isn’t anything not to love about this cheesy dorito chicken casserole!
Easy to make. This easy chicken casserole is perfect for busy weeknights. You can cook the chicken or use a rotisserie chicken, then just mix it all together, pour the casserole ingredients into a baking dish and bake in the oven.
Doritos. I am not sure I need to say much more than that as everyone knows that nacho cheese doritos are amazing and adding them to a casserole just makes the casserole even better! Especially when it is loaded with cheese!
Variations of this recipe
Add beans. You can add kidney beans or black beans to this Doritos casserole if you want to. When adding them I drain them and then just add them in when mixing everything together before pouring it into the casserole dish.
Add more Doritos. If you want to have a lot of crunch, after you remove the casserole from the oven you can add more crushed up doritos on top when you add the lettuce and tomatoes.
Use rotisserie chicken. If you want to make this recipe even easier you can use precooked chicken like a rotisserie chicken or chicken that you have already cooked. I keep bags of frozen cooked chicken in the freezer that I can defrost and use as needed.
Change up the cheese. I like using cheddar cheese but you can also use Mexican blend cheese.
Add more spice. If you want a bit more kick add some diced green chiles or a little more Chili powder. You can also use hot rotel if you want it to really have a kick, if you want a mild kick use mild Rotel.
Change up the chips. You can also use Cool Ranch Doritos in place of Nacho Cheese Doritos.
What to Serve with Chicken Taco Dorito Casserole
This chicken casserole is a full meal on its own for us but if you are wanting to have some side dish tortilla chips with homemade guacamole or Salsa, cheese quesadilla, or a fresh salad are great options.
How to store leftovers
Any leftovers need to be stored in the fridge, allow the chicken casserole to cool completely, and store it in a plastic container or cover with plastic wrap and then store it in the fridge.
Doritos Chicken casserole Ingredients
- 2 pounds boneless skinless chicken breasts
- 12 ounce can of corn (drained)
- 1 cup of sour cream
- 3 cups crunched up Nacho Cheese Doritos (the ones in the red bag)
- 2 cups shredded cheddar cheese
- 1/2 head of lettuce
- 1 large tomato diced
- 1 can of diced tomatoes with green chilies, we like using Rotel
- 1 teaspoon cumin
- 1 tablespoon chili pepper
- 1 teaspoon garlic powder
- 1/2 cup Pico de Gallo or Salsa
How to Make Doritos Chicken casserole
Preheat the oven to 350 degrees.
Dice chicken into bite sized pieces. In a large skillet add a small amount of oil (I used coconut oil), then add chicken, cumin, garlic powder, and chili powder and cook until cooked all the way through.
In a large mixing bowl mix add the canned corn, sour cream, Pace and Pico De Gallo, 1/2 cup cheddar cheese and mix well.
Add cooked chicken to corn and sour cream mixture and mix well.
In a large baking pan, spray with non stick spray. Then pour crunched up Doritos onto the bottom of the pan.
Add the chicken mixture on top of the Doritos, then add the remaining cheese on top of the chicken mixture.
Bake at 350 until cheese is melted.
While it is baking dice your tomato and lettuce.
Remove from oven and top with diced tomatoes and lettuce.

Ingredients

- 8 ounce bag shredded cheddar cheese
- 1/2 head of lettuce
- 1 large tomato diced
- 1 can Rotel tomatoes with chilis
- 1 teaspoon cumin
- 1 tablespoon chili pepper
- 1 teaspoon garlic powder
- 1/2 cup Pico de Gallo or Salsa
Instructions
- Preheat oven to 350 degrees.
