Made with a package of sugar cookie mix, M&Ms, icing and a circle cookie cutter, these may be the easiest Easter cookies you make!
As much as I love baking, I LOVE simple even more and that means that I am not afraid to take shortcuts – especially when baking with the kids or something that will be decorated.
For these Easter sugar cookies, for example, I chose to use a packaged sugar cookie mix instead of making them from scratch. It makes this recipe much quicker to pull together and, when paired with a sweet icing, no one noticed the difference.
I think sugar cookies are fun not just because they’re tasty but because the possibilities are endless. I made my Carrot Sugar Cookies and thought to myself….what other Easter sugar cookies can I make?
Thus this Egg Hunt Easter Cookie was born! Searching for eggs in the grass is a beloved childhood memory for many so I thought it the perfect thing to capture in a simple cookie.
What type of frosting should I use?
I like to use my homemade buttercream frosting! You can also buy a can of frosting at the store or use your own favorite recipe. As long as it is white and can be dyed, it works!
You can also use royal icing if you want to. If you have never worked with royal icing before, it gives the most beautiful finished cookie and is easy to work with. Check out how to decorate cookies with royal icing for our best tips and tricks.
Should I use gel or liquid food coloring?
I always prefer and recommend gel food coloring as it gives a more vibrant color. However, if you only have liquid on hand, that works too!
How to Store Easter Sugar Cookies
Depending on the icing you use, you can store these Egg Hunt Easter Cookies in an airtight container on the counter or in the fridge. If you have a frosting that melts easily or your house is particularly warm, definitely keep these in the fridge. Otherwise, an airtight container on the counter works fine!
Egg Hunt Easter Sugar Cookies
- 1 package of Sugar Cookie Mix mixed according to the package.
- 1 tub icing or if you want to use homemade use this Homemade Buttercream Icing Recipe or this royal icing recipe.
- green food coloring
- Circle shaped cookie cutter
- M&Ms or Easter Candy Eggs
How to Make Egg Hunt Easter Sugar Cookies
Preheat oven to 375.
Mix cookie mix according to the package if you are using packaged sugar cookie mix or make the homemade sugar cookie dough.
Roll out the dough 1/4 inch thick and then use carrot cookie cutter to cut them out.
Bake for 8-10 minutes and then allow the cookies to cool completely.
While the cookies are cooling get your icing ready. If you are using store bought icing you will need 1 container of icing. If you are using royal icing you will need 1 batch and if you are using homemade buttercream you will need 1 batch.
Color the frosting you are using with a few drops of green food coloring.
Spread or pipe the frosting on top of the cookies. Use a fork to “pull” the frosting if you want a dimensional look to your cookies.
Add the M&Ms on top, you can also use Easter candy eggs if you want to instead of M&Ms.
