It is usually rolled up in warm tortillas along with fresh toppings such as lettuce, tomatoes, olives, and cheese.
What is slow cooker chicken fajitas?
So these are the exact same thing as traditional chicken fajitas but it is made in the slow cooker. Making dinner in the crock pot saves you a ton of time, which is always a plus. As an added bonus, when you make the chicken in the slow cooker, it is so tender and moist in a way you can not get in the frying pan.
Can I use a different cut of chicken?
I actually do not recommend a specific cut of chicken because just about any cut will work great with this recipe. However, if you are wondering what cut of chicken you can use, some ideas are boneless, skinless chicken breast, boneless skinless chicken thighs or even even leftover slices chicken.
Can Crockpot Chicken Fajitas Be Prepped in Advance?
If you are making these fajitas, you might be planning on making them first thing in the morning. Sometimes, if you are rushing out the door, you might not have time to get everything ready in the morning. Even with a quick dump recipe like this one, it still requires cutting the peppers, onions and chicken.
I like to do this the night before. Once you have cut the chicken, peppers and onions, you can store them in the refrigerator in an airtight container. Anything that you are planning on using as topping for the chicken fajitas, like chopped lettuce, guacamole or salsa, you can prep but make sure to store each one separately in a container or plastic bag as well as keeping them in the refrigerator until it is time to serve.
How to Reheat Slow Cooker Fajitas
This recipe makes amazing leftovers. It is one of those recipes that tastes even better the next day. You can reheat these fajitas quickly in a microwave. Just stack your chicken along with peppers and onions in a microwavable bowl. Cover them with an oven-safe lid or plastic wrap and heat on high for 1-2 minutes. Make sure to stir the ingredients or they might stick to the bowl and not reheat evenly.
As a second option, you can reheat them in a saucepan over medium-low heat until hot, stirring frequently.
You can also reheat the chicken fajitas mixture in the oven. Bake for about 10 minutes in a 350 degree oven.
Can I Freeze Crockpot Chicken Fajitas?
While the chicken will taste just as good from the freezer, the peppers come out mushy when they are thawed. If you choose to freeze this recipe, I would only freeze the chicken.
Place the contents in a freezer bag or an airtight container. If using a container, place a piece of plastic wrap directly over the chicken to remove as much as air in contact with the chicken as possible. If you are using a plastic freezer bag, squeeze the air out of the bag. The chicken can be frozen for up to 3 months.
How to Serve Slow Cooker Chicken Fajitas
What I love about these chicken fajitas is that there is so many ways to serve them. You can serve them as in a bowl with just the ingredients from the slow cooker. This is a delicious and low carb way to enjoy this recipe. Another option is to serve it on tortillas with diced tomatoes, lettuce and sour cream which is how most people will serve the chicken fajitas. You can also serve this over rice for a very simple dinner.

Make a burrito– Use the chicken and peppers mixture to create a burrito with rice and refried beans.

Tips for Easy Crockpot Chicken Fajitas
While it is incredible easy to make these slow cooker chicken fajitas, here are a few of my favorite tips to make sure dinner comes out perfectly.
Use small tortillas- I prefer smaller tortillas because everything stays inside. That is why there is a fajita size. It really is the perfect size.
If you are concerned about the peppers being mushy and prefer to have a more crisp tender feel to the peepers, you can add the peppers during the last 30 minutes of the cook time.
Stretch this recipe- If you want to make this recipe serve more people than it typically would, you can add more veggies to the slow cooker. You can also serve it with rice or pasta to make the chicken go further in a meal.
Do not over cook- If you over cook this recipe, for more than the recommended time in the slow cooker, the chicken will become dried out and the peppers will be become mush and unappetizing.

Cut the raw chicken into strips.

Cook on high for 4 hours or low for 6 hours.
