I like my fries crispy, but I do not like using the fryer. It is messy, and they end up greasy. It also kind of kicks the healthy sweet potato fries thing out the window since I am frying them in oil. Instead, I make crispy sweet potato fries by baking them in the oven, and they come out perfect!
The trick to making fries crispy when making them in the oven is to toss them in cornstarch and then toss the fries in olive oil before baking them. It is important to toss them in the cornstarch first!
Tips for Making Baked Sweet Potato Fries
Slice them uniformly. You also want to make sure that you are slicing the sweet potato fries are evenly sliced. I have found that the best sizing for getting the perfect crispy sweet potato fries is having them about 1/4 inch thick.

How to Make Baked Sweet Potato Fries
Preheat the oven to 400 degrees F.
Wash and peel the sweet potatoes, and then slice the sweet potatoes into thin, uniform slices using a fry slicer or a knife.
Add cold water to a large bowl and then place the slices of sweet potatoes into the cold water.
Soak them in ice-cold water for an hour and then dry them off using a paper towel or a kitchen towel.
Add the sweet potato fries to another large bowl.
Add the cornstarch to the bowl and stir well to coat the sweet potato slices.
Add the olive oil and seasonings, then stir until the strips are covered almost evenly. If you want plain fries, you can skip some of the seasonings.
Lay the fries out in a single layer on prepared baking sheets, being careful not to crowd them.
