Pasta is my go to when I need a quick dinner. I keep the ingredients for easy pasta recipes on hand, and when I go shopping I always make sure to have the ingredients for at least one of my last minute healthy dinner recipes with pasta on hand just incase we need it.
It happens about once a week that I think I pulled meat from the freezer to defrost soon enough and then I realize I didn’t so pasta comes to the rescue. Add a salad, a side of veggies, and then some rolls or bread, and dinner is done. A tasty, healthy dinner that took no time at all to cook.
I also during the summer months put this avocado pasta on our meal plan because I don’t want to cook much in the hot summer but this is so easy to make it doesn’t even feel like I am cooking. Toss tomatoes in the oven to roast, cook the pasta till al dente, put the avocado pasta sauce ingredients in the blender or food processor, and blend them, then mix the sauce with the pasta. That is it! SUPER easy!

Easy to make. This avocado pasta recipe is easy to make, there is no cooking involved except for cooking the pasta.
Done in under 20 minutes. Including the cooking time for the pasta and blending up the avocado sauce this whole meal is done in under 20 minutes if you opt to not roast the tomatoes. If you are roasting the tomatoes then it is 40 minutes total but the oven does most of the work for you.
Creamy delicious sauce. This avocado pasta sauce is so creamy, it reminds me of an alfredo sauce but super healthy compared to it. With a hint of tangy flavor mixed with the cream avocados, it is just simple and delicious.

Normally when we make avocado pasta, we serve it with bread and salad. What type of bread and salad we serve depends on what we are in the mood for and what we have on hand.

Tips for making this recipe
Use ripe avocados. When you are buying avocados you can remove the steam and if the inside is green it is ripe to use.
Use any type of pasta. I like using fettuccine but you can use any pasta, rigatoni, spaghetti, macaroni etc. All types of pasta will work with this creamy avocado pasta.
Change up the tomatoes. If you do not have vine ripe tomatoes on hand you can use other types of tomatoes including cherry tomatoes, roma etc.
Add other veggies. You can add other veggies including sweet corn.
Add Protein. If you want to add some protein, grilled shrimp or cooked chicken are great additions.
Skip cooking the tomatoes. I like to roast the tomatoes, but if you are wanting an even quicker cook time you can skip roasting the tomatoes.
How to pick a ripe avocado
When you’re choosing now avocados to make a sauce just remove the stem of the avocado if it’s brown the avocado ripened too much. You want to have a slight give to the skin when you press on them. If you need to speed up the ripping you can place them in a brown paper bag with a banana overnight.
How do I keep avocado sauce from turning brown?
So the one downside to this avocado pasta sauce recipe is that when you store the leftovers the sauce will get to a darker green color when you store it in the fridge. We do not normally have any leftovers when I make this for dinner, but know ahead of time if you do then because of oxygen the avocado sauce will get a darker green when it is stored in the fridge, the lemon juice helps with this but doesn’t stop it but it is perfectly fine to eat.
How to Store Leftover
I do not suggest storing leftovers, but if you have them and need to they need to be stored in an airtight container in the fridge. But you must know that the sauce will brown due to being stored and being exposed to oxygen.
Avocado Pasta Ingredients
- 3-4 vine ripe tomatoes or a pint of cherry tomatoes
- 4 tablespoons olive oil
- 1 box of fettuccine noodles
- 2 ripe avocados seed and skin removed
- 2 garlic cloves peeled
- 1/2 teaspoon salt
- 2 tablespoon lemon juice
- grated fresh Parmesan cheese
- salt to taste
- pepper to taste
How to make Avocado Pasta Sauce
Preheat the oven to 350 degrees. Slice your tomatoes in half and toss them with 2 tablespoons olive oil. Place them on a parchment lined sheet pan and bake for 30 minutes.
While the tomatoes are cooking, put a pot of water on the stove and bring to a boil.
Once you put the pasta in the boiling water cook to Al Dante.
While the pasta is cooking, place 2 tablespoons of olive oil, avocado, garlic, salt, and lemon juice in a food processor.
Pulse until the ingredients are smooth and creamy.
Drain the pasta when it is done cooking and pour the pasta back into the pot.
Remove the tomatoes from the oven and add to the pasta, then pour in the avocado sauce and mix well to combine all the ingredients, and the pasta is covered in the sauce.
Top with parmesan cheese, salt, and pepper to taste and enjoy.
