Cinnamon Roll French Toast Casserole
Cinnamon rolls are a staple in our house when it comes to Christmas morning breakfast. To make my life easier I grab the canned ones in the fridge section of the grocery store and pop them in a pan, most of the time.
Sometime I like to go a bit more fancy with them and last year I made this Cinnamon Roll French Toast Casserole. Everyone loved this easy breakfast casserole made with canned cinnamon rolls.
I had planned on sharing this easy recipe sooner, however time got away from me. Here we are almost a full year later since I originally wanted to share this with you, but better late then never. At least I am sharing it before Christmas right?
This easy Cinnamon Roll French Toast Casserole is not only great for Christmas breakfast, but any time you want a simple breakfast that will wow folks. It is great for a qucik morning breakfast or a brunch too!

Can I make this ahead of time
If you want to make this breakfast casserole ahead of time there are 2 ways to do it.
You can make it the night before and follow all of the steps except baking, cover the pan and place it in the fridge overnight.
You can make the egg mixture and keep it in a bowl and then the cinnamon rolls in the pan ready to and store in the fridge. Then when you are ready to bake it mix the 2 together.
Variations of this recipe
Change up the spices. We are huge fans of pumpkin spice in this house, so I sometimes like to add pumpkin spice to ours, you can omit that if you want to.
Change up the Cinnamon Rolls. They make lots of different flavored cinnamon rolls. For Christmas morning breakfast I use the Original ones. You can use the Hot Chocolate Cinnamon Rolls, Orange cinnamon Rolls, or any other flavor you love.
Cinnamon Roll French Toast Casserole Ingredients
- 2 18 ounce cans cinnamon rolls
- 1/2 cup butter, melted
- 6 eggs
- 1/4 cup milk
- 2 teaspoon cinnamon
- 1 teaspoon pumpkin pie spice (optional)
- 2 teaspoon vanilla extract
- 1/2 cup maple syrup, optional
How to make Cinnamon Roll French Toast Casserole
Preheat oven to 375ºF.
Open the cinnamon rolls and save the frosting for the end. Cut the cinnamon rolls in quarters.
Place the rolls in a 9×13 inch pan and stir in the butter.
In a medium bowl mix together the eggs, milk, cinnamon, pumpkin spice if using, and vanilla.
Pour the mixture over the cinnamon buns, spread out the mixture evenly in the pan. It will look like there is not enough mixture in the pan but it will puff up.
If baking the same day preheat the oven to 375ºF. Place the casserole in the fridge while the oven preheats.
Bake for 35 minutes or until it’s golden brown.
Pour the maple syrup over the hot casserole.
Place the frosting in a microwave-safe container and heat until pourable, about 30 seconds. Drizzle the frosting over the casserole.

Ingredients
- 2 5 count cans cinnamon rolls or 3 8 count smaller cans cinnamon rolls
- 1/2 cup butter melted

Instructions
