This Chunky Monkey Pancakes recipe is amazing, the perfect way to get chocolate in your morning routine. I love these because they are made with homemade pancake mix and have banana, nuts, and chocolate added in. They are one of our family’s favorite pancakes recipes and my kids beg me to make them.
Homemade pancakes are always amazing, but load them up with walnuts, bananas, and chocolate chips and you have a pancake recipe no one can resist! I suggest making extras and putting them in the fridge or freezing them because once your family takes a bite they are going to want more.
Every Saturday morning my husband wakes up before everyone and makes Pancakes. When it was my turn I decided to step up the game and make some fancy pancakes for them. That is when I came up with these Chunky Monkey Pancakes.
My kids loved these pancakes and they know when I am making pancakes I am going to get creative. Homemade pancakes are amazing and fluffy and when I add things to them it just makes them even better!

How do you make Pancakes fluffy?
Fresh Ingredients. To have the best fluffy pancakes the most important thing is using fresh ingredients. Old ingredients will give you flat pancakes.
Do NOT over mix. You want those clumps in your pancakes, they are vital to making pancakes fluffy. If you over mix the batter you will end up with tough, unfluffy pancakes.
Don’t flip your pancakes too soon (or too late). When you see the bubbles starting to pop flip that pancake over! Overcooking pancakes will also make them tough and unfluffy.
How many pancakes does this recipe make?
This recipe makes 4 large pancakes. You can make large pancakes like we do or you can make them smaller if you want to. Each large pancake is equal to about 3 smaller pancakes.
How to Serve Chunky Monkey Pancakes
These fluffy pancakes are super flavorful all on their own but if you want to load them up you totally can. Fresh slices of bananas and real maple syrup is our go to for breakfasts. Of course, you can always stick with butter and maple syrup on top too, but as you know we like to go all out in our house. While some of thee toppings won’t make these the healthiest pancakes, they will make them the best dessert for breakfast pancakes ever!
- Add peanut butter. Serve with melted peanut butter drizzle or some peanut butter chips on top.
- Add more banana. Add slices of fresh banana on top.
- Add more chocolate. A drizzle of hot chocolate, a drizzle of hot fudge or some extra chocolate chips.
- Add more nuts. Add extra walnuts on top, I like to use chopped walnuts but you can use the walnut halves if you want to.
- Add more of everything. Inside these pancakes is bananas, chocolate chips and walnuts, add a little bit of each to the top of these pancakes and drizzle some maple syrup and you have even more delicious pancakes.
- Make them loaded pancakes. Add some extra chocolate chips and a drizzle of melted peanut butter or a drizzle of chocolate syrup and then some slices of fresh banana and you have a pancake that will take your taste buds over the top. My kids love them this way and sometimes when they want to get even more fancy add some homemade whipped cream on top too. But there are lots of other tasty ways to serve chunky monkey pancakes.
What are the best chocolate chips to use?
I like using mini chocolate chips so there is a balances of bananas, nuts and chocolate but you can use the regular sized chocolate chips if you want to. You can also do half chocolate chips and half peanut butter chips for a fun twist on this banana nut pancake recipe.

If you are having a large breakfast or a brunch you can add lots of different sides to make the meal. Whe when we are having these homemade pancakes for breakfast we normally do a fruit, sometimes bacon, and then milk or orange juice. How to Store Leftovers
While you can store pancakes on the counter at room temperature for a day it is best to store leftovers in the fridge in an airtight container. They will keep in the fridge for 3-4 days as long as they are stored properly. If you are wanting to freeze leftover pancakes you totally can and these homemade pancakes freeze very well.
How to freeze pancakes
Freezing pancakes is so easy. Just cook your pancakes and allow them to cool. Once they are cooled stack them into piles of the serving size you normally make. We do 3 pancakes per pile. Wrap each pile with plastic wrap and then put all wrapped piles of pancakes into a gallon size freezer bag and place in the freezer.
How to reheat Frozen Pancakes
To reheat the homemade pancakes, remove a frozen pancake stack and heat in the microwave in the plastic wrap for 30-45 seconds depending on your microwave.

- 1 1/2 cups flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 banana, mashed
- 1/2 cup mini chocolate chips
- 1/2 chopped walnuts
- 1 banana, sliced
How to make Walnut Banana Chocolate Chip Pancakes
Whisk the flour, baking powder, salt, and sugar together.
Combine the milk and eggs together.
Add the milk mixture to the dry ingredients, and gently stir until combined.
Stir in the melted butter, vanilla extract, and mashed banana.
Mix in the walnuts and chocolate chips.
Heat your frying pan or griddle to medium and pour the batter onto a lightly oiled pan, sprinkle some chocolate and walnuts on each pancake.
Flip when bubbles start to pop.
Cook for an additional two minutes.
Top with additional chocolate chips, walnuts, and sliced bananas.

When I tried this recipe, I added the chocolate chips and blueberries with the mixture. Couldn’t taste much banana. Will add 2 the next time?

I just made these for dinner tonight. The batch didn’t flip well but by the second batch they flipped better. I made a single batch of 7 pancakes. They were nice and fluffy. I added 2 mashed bananas to the recipe and still couldn’t taste the bananas much.
