These low carb cookies are the perfect solution to needing a bit of a sweet treat. I made these Low Carb Chocolate Peanut butter Coconut Pecan No Bake Cookies and everyone in my house loved them. Even better no one even realized they were low carb! Everyone in my house loved these keto chocolate cookies!
Chocolate Peanut butter Coconut Pecan No Bake Cookie
I wanted a chocolatey treat but I didn’t have macadamia nuts to make chocolate covered macadamia nuts, or almonds to make chocolate covered almonds so I went to the pantry to see what I did have. As much as I love Keto Buckeyes and Low Carb Chocolate Peanut Butter eggs, I wasn’t in the mood for them. I could have gone for some Sugar Free Vanilla Cupcakes or some keto chocolate chip cookies but I didn’t have the patience to wait for something to bake. Plus I wanted something a little bit different, and came up with these no bake keto cookies.
Keto Cookies
I have always loved no bake cookies because of how easy they are to make. The issues with eating most no bake cookies while sticking to low carb and keto is that they have chocolate that has sugar and rolled oats. Both of which are not low carb friendly, so I set out to figure out a tasty low carb no bake cookie that would have a similar flavor. The out come, was these amazing Chocolate Peanut butter Coconut Pecan No Bake Cookies!
I taste tested these cookies on my kids, and they all loved them. Next time I make them I am going to have to make a double batch so they do not get eaten so fast!
Low Carb Cookie Ingredients
I wanted simple when making this recipe and these low carb no bake cookies only have 4 ingredients!
Low Carb Chocolate
Normally when making a chocolate treat I use Lily’s Chocolate chips, but since Lily’s isn’t all that sweet I would have had to add sugar substitute. I was aiming for a sweet, but not to sweet treat with these and I wanted to keep these as easy and as simple as possible.
Then I remembered I had some Lakanto Sugar-Free Chocolate Bars in the cabinet. If you have never had one, they are so good on their own too! Lakanto chocolate bars are sweet because they are sweetened with with Lakanto Monkfruit Sweetener, even though they are a dark chocolate.

Toasted Coconut
When I need toasted coconut in a recipe I use unsweetened coconut. Then I make my own toasted coconut as needed using unsweetened shredded coconut. If you have never made toasted coconut, it is SOOO easy. Just follow the How to Make toasted coconut directions here.
Natural Peanut Butter
It is important to use a natural peanut butter when you are sticking to low carb and keto. Some peanut butters add things like sugar or other oils to them. Look for a peanut butter that has ONLY peanuts. My go to is Smuckers Natural Peanut Butter.
Pecans
I only had a bag of halved pecans on hand so I used my food processor to chop them up a bit. If you are planning ahead to make these, you can save yourself the step of chopping them by getting chopped pecans.
How to make Low Carb Chocolate Peanut butter Coconut Pecan Cookies
If needed toast your coconut using the how to toast coconut directions.
If needed chop your halved pecans with a food processor.
In a large bowl add coconut and pecans and give a quick stir.
Add in 1/2 cup natural peanut butter and mix everything together and set aside.
In a small bowl break your Lakanto Chocolate bar in to pieces and melt the chocolate in 30 second intervals in the microwave until it is all melted.
Pour the melted chocolate into the large bowl with all other ingredients and mix everything well.
Line a baking sheet with wax paper. Then using a tablespoon scoop your cookie mixture onto the baking sheet making each cookie 1 tablespoon worth the cookie mixture.
place baking sheet into freezer for 15 minutes so cookies can harden up.
Store cookies in an air tight container in the fridge.
