There is one big secret to making the perfect quick bread. First make sure you do not over mix the ingredients. You only want to mix long enough for the ingredients to incorporated. When the ingredients be over mix, it becomes tough.
Can I use frozen or canned cherries for this recipe?
When I make cherry banana bread recipe I use frozen cherries. Make sure the frozen cherries are thawed completely before adding them to the batter. If you want to use canned cherries, make sure to drain them well. Cherry pie filling can not be used in this recipe.
Can I use Frozen Bananas?
If you do end up with times where you had an over abundance of over ripe bananas and you froze bananas then you can use them. Just make sure that the bananas are fully defrosted before you use them to make your bread.

Tips and Tricks for making Cherry Banana Bread
You want to use 1 cup of cherries, roughly chopped. I measure the cherries whole and then I chop them for the bread.
The pan size matters. If you use a pan that is a different size, it will change the baking time. My pan is 8 ½ x5 x 2 ½. If you pan is smaller, the bread will take longer to bake. If you pan is larger, it will bake faster. To check if the bread is ready, stick a toothpick into the center of the cherry banana bread. It should not have any wet batter on it when you bring it out of the bread.
Making the Bread Look Pretty. I like to place whole bananas that are sliced in half to decorate the top of the bread. You can do this for appearance or you can skip it.

How to Make Cherry Banana Bread
Preheat the oven to 350°F. Prepare a loaf pan by lining it with parchment paper and spraying it with pan spray. Set aside.
In a medium bowl, combine the mashed bananas, vanilla extract, eggs, and melted butter.
Add the flour, sugar, baking powder, and salt. Mix until well combined and no streaks of flour remain.
Fold in the walnuts, chopped cherries, and chocolate chunks.
Pour the batter into the prepared loaf pan.
Slice the remaining whole banana in half horizontally and place both halves seedy side up in the center of the batter.
