I have been on a salad kick lately. I am not exactly sure why, but for some reason I am loving them. Thankfully there are plenty of tasty salad choices and combinations that I can make. This salad has a homemade dressing, with juicy chicken and crispy lettuce that comes together perfectly!

Caesar Salad with Homemade Caesar salad dressing and Chicken Ingredients
Caesar Salad Dressing. Use the homemade Caesar salad dressing recipe below to make an easy homemade Caesar dressing.
Chicken Breasts. Boneless skinless chicken breasts, are cut in half width wise so you have a thin piece of chicken. This makes it quicker and easier for cooking.
Romain Lettuce. Fresh crispy Romain lettuce is a must when making a Caesar salad.
Parmesan cheese. I prefer to have a block of parmesan cheese and shred it myself, but you can use pre shredded parmesan cheese found in the deli section of the grocery store.
Croutons. You can make homemade if you want to but I just grab my favorite ones at the grocery store and keep them on hand for when I plan on making salads.
Variations of this recipe
Change the meat or skip it. I love chicken on my salad, but you can also change out the chicken for grilled shrimp or bacon. Or you can add bacon on the salad with the chicken or shrimp. If you do not want any meat on your salad then you can skip it.
Change the cooking method of the meat. I tend to pan cook things as much as possible, but you can totally grill the chicken instead of pan frying it and then put it on your salad.
Add more veggies. Traditionally this salad has little veggies aside from the lettuce but you can totally add more including tomatoes, bell peppers, onions, radish, and cucumbers.
Add Hardboiled eggs. Hardboiled egg are great on top of any salad!

While this salad is perfect for being a meal on its own it is also one of the easiest, perfect side dishes to go with literally anything. If you are making pasta, you can not go wrong with adding a fresh made salad! Salad is my go to side dish for all my pasta recipes including Shrimp Alfredo, Pumpkin Pasta Sauce, Creamy Tomato Pasta, Easy homemade lasagna and easy baked ziti.

Can you Make Caesar Salad with Chicken ahead of time?
Yes! You sure can and that is one of the things I love most about it! If you are meal prepping and want to plan ahead I suggest making all of the ingredients separately. Then allow the chicken to cool completely. Put the lettuce, parmesan cheese and cooled chicken in a food storage container and store in the fridge. Then put the dressing in a separate container until you are ready to eat so your lettuce doesn’t get soggy.

Grate the parmesan cheese, then place all the ingredients for the dressing into a blender and pulse until well blended. Pour dressing into a salad dressing container.

- 1 pound boneless skinless Chicken breast

- 3/4 cup mayonnaise
- 1/2 cup parmesan cheese grated
- 4 anchovy fillets
- 4 cloves garlic
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 1/4 teaspoon pepper
- pinch salt

- Grate the parmesan cheese, then place all the ingredients for the dressing into a blender and pulse until well blended. Pour dressing into a salad dressing container.

- Make the homemade Caesar salad dressing and place in the fridge until ready to use.
- Heat a medium pan over medium heat. Slice your chicken and half to end up with two thin slices of chicken.
- Pat the chicken dry with a paper towel and season with salt and pepper. Cook on both sides until golden brown and the internal temperature reaches 165°F.
- While the chicken is cooking wash and cut the lettuce. Use a cheese shredder and shred the cheese if you are using a block.
- Place your lettuce, parmesan, and croutons into a large bowl.
- Pour the dressing over the salad and toss the salad until all the lettuce is well coated.
