For this recipe, you don’t have to remove the rind from the brie before baking. You can if you want to but the rind is edible.
What brie is best for baking?
When it comes to baked brie, you’ll want to use a triple crème brie. Triple crème brie is a type of cheese that is made with extra cream, resulting in a richer, creamier texture. It’s perfect for baking! If you can’t find triple crème brie, you can also use regular brie. Just keep in mind that it won’t be quite as rich and creamy.
Should brie be at room temperature before baking?
Yes, you should allow the brie to come to room temperature before baking. This will help it to bake evenly and prevent it from becoming too runny.

Add nuts. Baked Brie can be changed up by adding nuts on top of the cherry pie filling before wrapping it up. I add almonds but you can also skip the almonds if you want to.
Homemade Puff Pastry. You can make homemade puff pastry if you want to, however I just use the store bought frozen puff pastry. Before making baked brie be sure to let the puff pastry sheet thaw completely.
Roll out the puff pastry with a rolling pin. Some puff pastry sheets I am finding in the store are smaller then they used to be, if your puff pastry sheet is to small use a rolling pin and roll it out or connect 2 pieces of puff pastry sheets so it is big enough.
Cherry pie filling. You can use store bought cherry pie filling or homemade cherry pie filling. I personally like the flavors of homemade cherry pie filling better than canned pie filling.

Making lemon zest is easy, all you need is a fresh lemon and a citrus grater. Gently rub the lemon with the peel on the grater to remove only the yellow part of the peel.

- 1 6-inch round of brie
- 1 sheet puff pastry
- 4 tablespoons melted butter
- 1 cup cherry pie filling
- 1/4 cup slivered almonds
- Lemon Zest from one lemon
How to Make Cherry Baked Brie in Puff Pastry
Preheat the oven to 375°F.
Lay out the puff pastry sheet flat on a baking sheet or in a pie pan and roll with a rolling pin so it is big enough to wrap the cheese around. Trim the edges so they are round and you have an oval shape. Save the extra pieces of puff pastry dough. You do not have to shape the dough, you can leave it as is if you want to. If I am wanting to make the top of it fancy then I will trim it and use the excess, otherwise I leave the rectangle shape and fold it.
Melt the butter and using a brush, brush the melted butter inside the puff pastry.
Place cheese round in the center of the puff pastry dough.
Spread the cherry pie filling on top in the center of the brie.
Sprinkle 1/4 cup of the slivered almonds on top of the cherry pie filling and sprinkle the lemon zest on top of the almonds.
Bring the edges of the puff pastry dough up over the top of brie cheese and seal well, using most of the remaining butter.
Brush the top of the pastry well with the rest of the butter.
Sprinkle the top with slivered almonds if desired.
Bake in a preheated 375°F oven for 20-35 minutes.
Remove and let sit for at least 20 minutes before serving.
