California Chicken starts with two of my favorite flavors to get with creative with. Chicken and avocado. This Guacamole chicken is seasoned with Salt and pepper, cooked in a skillet then topped with fresh tomatoes, homemade guacamole, bacon and cheese.
California Avocado Chicken
A low carb chicken recipe that my whole family loves and this chicken avocado recipe has become one of my favorite chicken recipes.
A few months ago my family and I left the south and moved to California (because of my husband’s job). The flavors here are so much different then what I spent the last few years enjoying and I am embracing them. I embrace the different flavors of the areas we live in and come up with tasty recipes to share with all of you.
When we lived in the North East I embraced things like breakfast tacos and Boston Cream Pie. When we lived in Louisiana I embraced things like shrimp boil and biscuits and gravy. Now we are in California and I am going to embracing the food offerings here and coming up with recipes that reflect where we live.
Fun fact, California’s state fruit is the avocado. Good thing I love avocados, and could eat homemade guacamole and any thing with avocado daily! I have been making Chicken and Avocado Burrito for years and they have always been a hit.
My most recent delicious chicken dinner recipe is this California Avocado Chicken, or as my kids called it California chicken. I will still keep making this for dinner even after we move out of California in a few years.

Bacon Avocado Chicken Recipe
I know it comes as no surprise to you that I love chicken, bacon and avocado. We have lots of recipes here on the blog that have at least one of those ingredients in it.
There is something that just fits perfectly when you combine chicken with avocado. More specifically, homemade guacamole. Then add some bacon and top it with cheese, melt it and oh my! The flavors mesh so well to give you an amazing chicken and avocado recipe that makes the perfect chicken dinner recipe!
Many times when I am making this I make extra guacamole and let the kids dive in and enjoy, because they can never seem to get enough guacamole whenever I make it!

California Chicken Ingredients
- bacon
- chicken breast – I used 2 chicken breasts when making however if you have large chicken breast cut it in half so each chicken breast piece is 1/2 a pound.
- Salt
- pepper
- tomato
- cheddar cheese
- Ripe Hass Avocados
- white onion or red onion
- chili powder
- garlic powder
- lime juice
How to Make California Chicken
Place your bacon into a medium sauté pan and cook until the bacon is crispy. Once bacon is cooked remove the bacon from the pan onto a plate lined with paper towels to drain. Leave the bacon grease in the pan.
Season your chicken breast with the salt and pepper and add to the same pan that the bacon was cooked in. Cookie the chicken over medium heat until the chicken breast until they reach an internal temperature of 160°. It will take 6-8 minutes per side of chicken to get to 160°, it depends on your stove and your pan so my suggestion is to use a meat thermometer to make sure you get to 160°.
While the chicken breasts are cooking make your homemade guacamole.
Cut your avocado in half length wise and remove the seeds. I find it easiest to stab the seed with a knife and gently pull the seed out.
Using a spoon scoop the insides from all of the avocados into a large bowl.
Once all of the avocados are scooped out use a potato masher and smash all of the avocado. You can make is as smooth or as chunky as you would like to. I personally like to have chunks in my guacamole.
Wash and dice your onion and add the onion to the bowl of mashed avocado.
Cut your tomato so it is 1/4th and 3/4th size pieces. Take the 1/4 of the tomato and dice it. Slice the other section of tomato into 4 slices. Set the tomato slices aside and add the diced tomato to the bowl of avocado.
Add the lime juice, garlic powder and chili powder to your avocado, tomatoes and onions and mix well to incorporate into the guacamole. Set aside the bowl of guacamole.
If your pan is oven safe you can leave the chicken in the pan. If it is not then you will need to move it to an oven safe baking dish.
Once the chicken has reached 160° top the chicken with the tomato slices, then half of the guacamole goes on to each of the chicken breasts. Top the guacamole with the cooked bacon and then sprinkle with the cheddar cheese.
Place the whole pan underneath your broiler until the cheese is melted.
