Well, I had a butternut squash sitting on the counter and the kids asked for pasta so I figured why not come up with a creamy butternut squash pasta recipe. This healthy butternut squash sauce was a huge hit in my house and I am sure it will be in your house too!

Butternut Squash Pasta Sauce Recipe Ingredients
- 1 and ½ cups uncooked pasta
- 4 cups cubed butternut squash, peeled and de-seeded – Learn the easiest way to How to Peel Butternut Squash
- 2 tablespoons unsalted butter
- ½ cup vegetable broth
- ¾ cup 1% milk (You can also use whole milk, or 2% milk which will make it a bit creamier and thicker)
- pinch of Salt
- pinch of black pepper
- 1 teaspoon paprika
- 1 and ¼ cup cheddar cheese
- 1 tablespoon fresh parsley
How to Make Butternut Squash Pasta Sauce
Peel the butternut squash with a vegetable peeler, remove the seeds and cut into small cubed pieces.
Fill a large pot of water and over high heat bring a pot full of water to a boil. Add the butternut squash and boil until fork tender.
Once the squash is cooked, drain by pouring the water and squash into a strainer.
Refill the pot with water and bring it to a boil and cook the pasta to al dente according to package instructions. While the pasta is cooking continue making the sauce. When the pasta is done cooking drain in a strainer and add pasta back to the large pot.
In a small skillet on the stove over medium heat or in the microwave melt the butter.
Place the cooked squash in a high speed blender with the butter, vegetable broth, milk, salt, pepper, and paprika.
Pulse until smooth.
Add the cheese into the blender and give it a quick pulse to blend the cheese into the sauce.
Pour the sauce over the cooked pasta and mix until all noodles are covered and the cheese has melted.
If you love cheese, add a sprinkle of grated parmesan cheese when serving.

Ingredients
- 1 ½ cups noodles
- 3-4 cups cubed butternut squash peeled and de-seeded
