Need a SUPER Simple Easter dessert? These Simple Bunny Ears Cupcakes are easy to make and quite adorable! We are a household that loves to have fun and make holidays fun. I like to have holiday treats for the kids not just on the holiday but also during the days and weeks leading up to the holiday.
Of course, things are always really busy in our house, getting things done, with school and work and regular life. I need things to be as easy as possible. These Easter cupcakes are so easy to make that the kids can help create and decorate them. This also makes for a fun Easter activity for the kids to do while we get planning done for Easter, including going over the Easter story like we do each year.
Tips for Making Easter Bunny Cupcakes
Let the cupcakes cool completely before frosting. I find it best to bake the cupcakes, remove them from the baking pan, and start making the frosting. This way the cupcakes are cooled when I go to frost them.
Use a pastry bag or thick zip close bag to frost the cupcakes. I prefer decorating cupcakes with a pastry bag, it makes life easier. But if you don’t have pastry bags, you can use freezer zip-top bags. But you need to ensure you’re using the freezer bags, or when you push the frosting out, the bag will rip open. Trust me, I’ve had experience with this!
Use Homemade Cake or cake mix. When you are making these cupcakes, you do not have to make homemade cupcakes. A boxed cake mix for making the cupcakes will work just as well.
Tips for Making Homemade Cupcakes
Follow the recipe. Each cupcake recipe is different. It is important to follow the recipe as directed. All of our cupcake recipes have been tested multiple times to make sure they are perfect.
Bring ingredients to room temperature. Cupcakes will bake best when the ingredients are brought to room temperature before mixing the cupcake batter.
Do not over mix. Over-mixing the wet ingredients and the dry ingredients will lead to having tough and flat cupcakes. You want to mix everything just until it is well mixed.
Fill the cupcake liners appropriately. You do not want to overfill the cupcake liners.
Use quality cupcake liners. While you might not think it matters a cupcake liner but having a quality cupcake liner will make it so your cupcakes don’t stick to the wrapper and peel off nicely so you can see the perfect cupcake in it.
Bake one cupcake pan at a time. Using the oven rack’s center, bake one cupcake tray at a time. This will give you the best cupcake results.
Use the right kitchen tools. You want to use a large bowl for making the cupcake batter and a medium bowl, small mixing bowl or a plate for the coconut. You can use a stand mixer, an electric hand mixer or a mixing bowl and a wooden spoon to make the homemade cupcakes. When you are making the frosting you want to use the whisk attachment and either a stand mixer or an electric hand mixer.

Use homemade colored sugar. To decorate these Easter cupcakes, you are going to need colored sugar. I like using pink sanding sugar and purple sugar, but you can make the inside of your bunny ears any color. You can buy it in the store or learn how to color sugar and make it whatever colors you want.
Use Sprinkles. If you do not have sanding sugar on hand then you can use sprinkles in place of it.
How to tell when cupcakes are done baking
I like to use the toothpick test when making cupcakes with the kids because it is easier for them to see and learn. But you may not want to use that method if you have been making cupcakes for a while.
If you want an even easier method, the cupcake bounce done method, as we call it, is even easier. Pull the tray of cupcakes out of the oven and lightly press on a cupcake in the middle of the baking pan. If it bounces right back and no fingerprint is left behind, then your cupcakes are done. If there are fingerprints, you need to bake them for a few more minutes.
How To Cut Marshmallows to Make Bunny Ears
I find using kitchen shears is the best way. Then cut the marshmallows in half at an angle.
How to Store Cupcakes
It is best to store cupcakes in an airtight container on the counter. Cupcakes are best to be enjoyed within 48 hours of making them. They won’t be harmful to eat after 48 hours, but they will start to dry out and not be as fresh.

- 24 Cupcakes
- buttercream Frosting
- 24 large Marshmallows
- 1/2 cup Pastel colored Sugar
- 1 cup Colored shredded Coconut
How to Make Bunny Ears Cupcakes
Make a batch of cupcakes. You can use the vanilla cupcake recipe I have included in the recipe card below or any flavor cupcake you want. They can be homemade cupcakes or boxed cake mix cupcakes.
Once the cupcakes are done baking, remove them from the oven and allow them to cool.
While the cupcakes are cooling, make the buttercream frosting and set it aside in the bowl.
Next, make the bunny ears out of the marshmallows. If you need to make your homemade sanding sugar, do that before cutting the marshmallows in half.
Using kitchen shears, cut the marshmallows in half at an angle. Dip the sticky side of the marshmallow into the sanding sugar. You need two ears per cupcake, so one marshmallow per cupcake.
How to Make Bunny Ear Cupcakes
Once the cupcakes are cooled it is time to start assembling the cupcakes.
Once your frosting is made, your cupcakes are cooled, and your bunny ears are done, place your buttercream frosting into a piping bag with a large round tip.
Pour the sweetened coconut into a bowl.
Pipe the buttercream on the top of the cupcakes. If you are unsure on how to do this, check out how to make a cupcake swirl. It is super easy! You only want to have a small cupcake swirl for these cupcakes.
Next, dip the frosted cupcakes into the coconut, keeping a round shape with the frosting.
Once all of your cupcakes are frosted and have coconut on top of them, it is time to put your bunny ears on.
Place a small dot of buttercream at the bottom of the marshmallow and stick two ears on the cupcake.

- 1 batch buttercream Frosting
- 24 large Marshmallows

- 1 1/2 cups self-rising flour
- 1 1/4 cups cake flour
- 2 cups granulated sugar
- 1 cup unsalted butter at room temperature
- 4 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract

- 1.5 cups Butter
- 1.5 cups Shortening
- 3 teaspoons Vanilla Extract
- 3 pounds Confectioners sugar
- 2 1/4 tablespoons hot water

How to Make Bunny Ears Cupcakes
How to Make Vanilla Cupcakes
- Preheat the oven to 350 degrees. Line your cupcake pans with your choose of cupcake wrappers.
- Place your self-rising flour, cake flour, and sugar in the bowl of your mixer. Mix them together for a minute or two until they are well combined.
- Cut your butter into tablespoon pieces. Slowly add your butter into the flour mixture one piece at a time continue mixing until you have reached the texture of sand.
- Pour half of your milk into the flour mixture and mix just until the milk is incorporated. Use your rubber spatula to scrape down the sides of your bowl. Add your remaining milk and the vanilla to your batter and mix until combined.
- Slowly add in one egg at a time to the cake batter, making sure each egg is incorporated before adding the next egg.
- Scoop the batter into the prepared cupcake pan, filling them 3/4 of the way full.
- Bake for 10 minutes then rotate the cake pans so the pan that was on the top rack is now on the bottom and the pan that was on the bottom is now on the top rack. Continue to bake for another 10-13 minute until a toothpick comes out clean from the center of the cupcake.
- Transfer the cupcakes to a cooling rack until they have reached room temperature.
- While the cupcakes are cooling make your frosting.
How to Make Easy Vanilla Buttercream Frosting
- Bring the butter to room temperature. Do NOT put it in the microwave to soften, put it on the kitchen counter and soften.
- Add the butter and the shortening to the bowl of the stand mixer bowl. Using the paddle handle on the mixer to combine the two on medium speed.
- Once butter and shortening are combined slowly add in the confectioners sugar and mix it little bit little until the sugar is incorporated into the butter/shortening mixture then add in the Vanilla Extract and let the mixer whip the frosting for 10 minutes to bring it to fluffy frosting.
- If the frosting is thick add a little water a little bit at a time until you get to the consistency you are wanting.
- Set the frosting aside until the cupcakes are done cooling.
How to Make bunny ears with Marshmallows
- While the cupcakes are cooling make your bunny ears.
- Using kitchen shears, cut the marshmallows in half at a angle. Dip the sticky side of the marshmallow into the sanding sugar. You need 2 ears per cupcake, so one marshmallow per cupcake.
How to Assemble Bunny Cupcakes
- Once your frosting is made, your cupcakes are cooled and your bunny ears are done place your buttercream in a piping bag with a large tip.
- Pour the sweetened coconut into a bowl.
- Pipe the buttercream on the top of the cupcakes. If you are unsure on how to do this, check out how to make a cupcake swirl. It is super easy! You only want to have a small cupcake swirl for these cupcakes.
- Next dip the cupcakes into the coconut making sure to keep a round shape.
- Once all of your cupcakes are frosted and have the coconut on the top of them it is time to put your bunny ears on.
- Place a small dot of buttercream to the bottom of the marshmallow and stick two ears on a cupcake.
