For this Buffalo chicken spaghetti squash recipe, you can easily adjust the spiciness of this baked chicken spaghetti squash recipe by removing the seeds and veins of the jalapeno peppers before adding them to your buffalo. If you are wanting to tone down the spice factor a lot then you can skip the jalapeno peppers altogether.
Use frank’s red hot sauce.I am also going to mention that while you might think of using a different hot sauce, I highly suggest using Frank’s Red Hot Sauce. I have found this hot sauce to have the best flavor in this Buffalo Chicken Spaghetti Squash recipe.
How to Cut uncooked Spaghetti Squash
If you cant get your knife into the shell to cut it heating it in the microwave will make it easier. Using your knife make little dashes all the way around the squash where you are planning to cut it open. Then place it in the microwave for 5 minutes to soften the outside. Once it comes out you just cut along that line of dashes much easier. You are going to want to cut the spaghetti squash length wise so that you end up with two long pieces.
How to Scrape a Spaghetti Squash
After you have cooked the spaghetti squash you will want to scrape the insides and make spaghetti squash noodles. To do this take a fork and scrap the cooked flesh with the fork which will remove the squash from the squash shells and it will come out in strings that look like noodles.
Best Way to Cook Chicken
This recipe calls for 1 cup of cooked chicken. There are a few different ways that you can cook chicken. I prefer to use boneless skinless chicken breast but you can also use boneless skinless chicken thighs if you want to.
- Use an Instant Pot. Place the rack inside the Instant pot and then pour in one cup of water. Place the chicken on top of the rack, add a chicken bouillon cube, and set to start. I usually make 6 chicken breasts at a time. Check to make sure the chicken has reached 165 degrees before using.
- Boil chicken. Just add raw chicken breasts to a pot and cover with 3 cups of chicken broth or water whichever you prefer. Heat on medium high heat and bring to a boil. Once boiling turn heat to low and cover pot with a lid and let simmer for 10 minutes.
- Bake chicken. Spray a baking sheet with non stick spray place the chicken breast on the baking sheet and drizzle with olive oil. Then bake for 35-45 minutes until the chicken is fully cooked.
- Use Rotisserie Chicken. You can also use leftover chicken in this recipe or use rotisserie chicken. Store bought already cooked, prepackage chicken is another option.
To make things easier on myself I keep cooked and shredded chicken in the freezer. It is super easy to make a large batch of cooked chicken, shred it and then portion it out into 1 cup freezer bags. Then whenever I need shredded cooked chicken for a recipe I pull it from the freezer the night before to thaw. On nights that I have forgotten to pull it out the day before a few minutes in the microwave on defrost gets the cooked chicken ready to go in a casserole.
How to Shred Chicken
There are a few ways to shred chicken. It is best to start with warm chicken. Then you can pull the chicken apart using your hands or 2 forks.
The faster way to shred chicken is to place it back into the Instant Pot bowl or a mixer bowl. Use your hand mixer and run the beaters through the chicken. This will shred it the easiest way. When you are going to shred the chicken, use the shredding chicken trick that makes it super easy!
Variations of this recipe
Use blue cheese dressing. I like topping it with ranch but if you prefer blue cheese then your can use blue cheese dressing and even add some blue cheese crumbles on top if you want to.
Make is a casserole. I like using the shell of the spaghetti squash and filling it, but you can also use a casserole dish if you want to and make it a buffalo chicken spaghetti squash casserole. Instead of putting all of the chicken and spaghetti squash mixture into the shells of the squash, put the mixture into a casserole dish and bake just the same as if it was in the shells.
Use sour cream. If you do not have greek yogurt you can use sour cream instead.

- 1 cup chicken cooked and shredded or diced
- 1/2 cup cheddar cheese shredded
- 3 tablespoon Frank’s Red Hot sauce
- 3 tablespoon Greek yogurt
- 1/2 jalapeno peppers diced
- 1/8 cup chopped green onion divided the white from the greens
- salt to taste
- 1/3 cup cheddar cheese shredded
- ranch dressing to taste
- pepper to taste
How to Make Buffalo Chicken Spaghetti Squash
Preheat the oven to 400 degrees.
Cut the whole squash in half vertically so you end up with 2 pieces. Scrap the seeds out with a spoon.
Drizzle the flesh side of the squash with oil and then sprinkle with salt, and pepper. Place the spaghetti squash halves cut side down on an aluminum foil lined sheet pan. Bake for 30 minutes (until fork tender) in the preheated oven.
While the squash is baking cook your chicken by your preferred method if needed. If you are using a rotisserie chicken you can skip cooking chicken.
Remove the squash from the oven and use a fork to break up the flesh into noodles. Place the spaghetti squash noodles into a large mixing bowl.
Add the chicken, cheese, hot sauce, yogurt, jalapeno peppers, whites of the green onions, salt, and pepper into the spaghetti squash noodles and mix well util everything is combined.
Place the shells on a foil lined baking sheet, with the empty side up. Divided the buffalo chicken mixture into the two empty shells of the squash.
Top the squash with the remainder of the cheddar cheese.
Place them under the broiler in the oven until they get golden brown.
Drizzle the top with a drizzle of ranch and the greens of the green onions.
