Low carb chicken recipes that are easy are a must have in my house! I don’t have time to be standing in the kitchen all day long making meals. This Buffalo Chicken Celery Sticks works perfect for me to make a batch of Buffalo chicken dip and then have it in the fridge to reheat at lunch time a few times during the week.

I am always looking for way to change things up and make them even better. One of my all time favorite recipes is my buffalo chicken dip recipe. I use it often to make buffalo chicken sandwiches and buffalo chicken quesadillas.

What kind of Chicken do I Use when Making this Recipe?
Normally when I make this easy chicken recipe I used canned chicken unless I have other cooked chicken on hand. If you have left over baked chicken or a rotisserie chicken on hand you can use that instead of canned chicken.
Quality Blue Cheese Crumbles is a MUST!
When you are making these you want to make sure you are using a quality blue cheese. Don’t skimp here, you want the amazing blue cheese flavor mixing with that buffalo chicken flavors to make your mouth happy (and of course your tummy!)
Can I Make this Recipe ahead of time?
Yes! You can totally make this recipe ahead of time, I suggest making the buffalo chicken first and then filling the celery when you are ready to eat them.
I also have to tell you that I do not always reheat the buffalo chicken mix. It tastes pretty dang good cold too! Which is great if you are packing a lunch to take with you to work. Just put the buffalo chicken dip in a container, your blue cheese crumbles in another container and your celery in another container, then put together your lunch at lunch time!

Buffalo Chicken Celery Sticks Ingredients
- 15 Celery stalks
- 1 cup blue cheese crumbles
- 8 ounces Cream cheese
- 1/2 cup ranch or blue cheese dressing
- 1/2 cup Buffalo style hot sauce
- 1/2 cup Monterey Jack cheese
- 1.5 cups Chicken (Use canned chicken or cooked chicken breasts)
How to Make Buffalo Chicken Stuffed Celery
In your crockpot place the cream cheese and use of rubber spatula to soften cream cheese. Add the rest of ingredients and mix well.
Cook the dip in the covered crockpot on high for 1 1/2 hours.
Once the buffalo chicken is cooked remove from the crockpot and let cool a few minutes.
While it is cooling wash and cut your celery into pieces.
Fill celery boats with buffalo chicken dip and top with blue cheese crumbles.
