Balsamic Roasted Red Pepper Pasta Salad
This Balsamic Roasted Red Pepper Pasta Salad is amazing, made with roasted red peppers, chickpeas, mozzarella cheese, olives and Balsamic Vinegar it is sure to be a hit at your house too! It is super easy to make but looks beautiful so it is also a great pasta salad to bring to parties and get togethers!
This easy pasta salad recipe is one of my go to pasta salad recipes every summer. Most of the ingredients are pantry staples which makes it easy to have everything on hand at all times.
Make ahead Pasta Salad
During the summer months our typical dinners include things like Grilled Steak, shish kabobs, grilled chicken, grilled salmon, hot dogs, sausage and hamburgers (especially the amazing Hawaiian burger my family loves so much!). Basically if I can put it on the grill to cook it I do. It makes for not only a delicious meal but I also don’t heat up the house.
In order to save myself time I make summer side dish salads ahead of time and keep them in airtight containers in the fridge and we serve them for dinner all week long. Making salads that will keep in the fridge ahead of time saves me a lot of time during the week when making dinner.

Balsamic Roasted Red Pepper Pasta Salad Ingredients
- Pasta of choice k
- fresh mozzarella cheese
- Canned Chickpeas
- Roasted Red Bell Peppers
- Large Black Olives
- Olive Oil
- Balsamic Vinegar
- Salt
- Pepper
How to Make Balsamic Roasted Red Pepper Pasta Salad
Cook pasta according to box once cooked drain and rinse with cold water until cold.
Pour pasta in a large bow.
Slice your red peppers, olives and add into pasta.
Drain the can of chickpeas and add them into the bowl.
Cut the mozzarella cheese into small pieces and add to the bowl.
Add olive oil and balsamic vinegar into the bowl and stir well.
Serve immediately or store in an airtight container in the fridge.

- 1 pound box pasta
- 8 ounces fresh mozzarella cheese
- 15 ounces canned Chickpeas
- 12 ounces Roasted Red Bell Peppers or homemade roasted peppers
- 6.5 ounces Large Black Olives
- 2 Tbsp Olive Oil
- 1/4 cup Balsamic Vinegar
- Salt
- Pepper
Instructions
- Cook pasta according to box once cooked drain and rinse with cold water until cold.
- Pour pasta in a large bow.
- Slice your red peppers, olives and add into pasta.
- Drain the can of chickpeas and add them into the bowl.
- Cut the mozzarella cheese into small pieces and add to the bowl
