Chocolate Chip Cookie Ice Cream Sandwiches
For these amazing Cookie Ice Cream Sandwiches I used my favorite Bakery Style Chocolate chip cookies. Seriously these cookies are amazing and they are our favorite cookie! The heat is coming and that means we need some tasty cool summer treats to cool off with! The kids love it when we make these cookie ice cream sandwiches and I let them pick what flavor ice cream they use in the middle of theirs.
The great thing about this recipe and using chocolate chip cookies to make an ice cream sandwich is that just about any flavor ice cream will do! Just pick your favorite! We traditionally go with chocolate ice cream, strawberry ice cream or vanilla ice cream in our house but feel free to change it up!

How to Store Chocolate Chip Cookie Ice Cream Sandwiches
After you are done assembling the Chocolate Chip Cookie Ice Cream Sandwiches you will want to put them in the freezer on a baking sheet to completely firm up the ice cream if you are not going to eat them right away.
After they have frozen completely, wrap each ice cream sandwich in wax paper and store them in the freezer.
How Long does Ice Cream Sandwiches last?
These ice cream sandwiches will keep in the freezer for up to 3 months. However I can not guarantee that your family won’t eat them all long before that!
Variations of this recipe
Change up the Ice cream. I like using chocolate and vanilla but I also like using strawberry ice cream, cookies and cream ice cream and chocolate chip cookie dough ice cream.
Change up the add ons. I like to roll mine in mini chocolate chips but you can also use chocolate sprinkles, rainbow sprinkles, mini M&Ms, or Reese’s pieces.
I use store bought Ice cream but you can also make homemade ice cream and use that.
Chocolate Chip Cookie Ice Cream Sandwiches Ingredients
- unsalted butter, softened
- sugar
- brown sugar
- vanilla extract
- eggs
- all-purpose flour
- kosher salt
- baking soda
- coarsely chopped semisweet chocolate
- Ice cream
- mini chocolate chips
How to Make Chocolate Chip Cookie Ice Cream Sandwiches
*When making these I make 20 cookies total, they end up being large cookies and will make 10 chocolate chip ice cream sandwiches. You can make them smaller just make sure you make an even amount of cookies to you can make the sandwiches. You can make the cookies smaller and you will end up with more cookie sandwiches.
Preheat the oven to 350 degrees. Line two cookie sheets with parchment paper.
Whisk the dry ingredients, flour, kosher salt, and baking soda together in a medium bowl.
Beat your butter, sugar, and brown sugar together with your mixer on medium speed until light and creamy, about 5 minutes. If you are using your stand mixer you will want to use the paddle attachment, but you can use large bowl and a hand mixer.
Add in the eggs one at a time and then vanilla just until combined.
Turn the speed down to low speed on your mixer and carefully add in the flour mixture into the wet ingredients just until it’s combined.
Stir in the chopped chocolate.
With a 1/4 cup cookie scoop, scoop out the dough into balls.
Arrange them on a sheet pan about 2 inches apart.
Bake for 15 to 18 minutes, just until the edges start turning brown and remove the cookies from the oven.
Let them cool on the cookie sheet or wire rack for 5 to 10 minutes. Remove the cookies from the cookie sheet when they have reached room temperature and move them to the freezer for 5 minutes or so.
Assembling Chocolate Chip Cookie Ice Cream Sandwiches
Once your cookies are cooled completely, lay 10 of the cookies on to a baking sheet flat side up.
Using a medium ice cream scoop get a well rounded scoop of the ice cream (between 1/4-1/2 cup of ice cream depending on how big you made your cookies) and place a scoop of ice cream on each cookie.
Place another cookie on top of each ice cream scoop and press the top second cookie into the ice cream gently from the center so the ice cream will spread out to the edges of the cookie, be careful so you don’t break your cookie and half.
On a small plate pour the mini chocolate chips and then roll the sides of your ice cream sandwich into the chocolate chips, you might need to use your hands to help them stick.
